Isolated from a uniquely crafted double IPA out of the Northeastern United States, this yeast produces a balanced fruity ester profile of peaches and light citrus that complements any aggressively hopped beer. Expect this strain to take off fast and ferment wort quickly, though elevating the temperature following the bulk of fermentation may be required to raise the attenuation.

In order to achieve high attenuation, we recommend fermenting at 67-69 ºF for 3-4 days, and then raising the temperature to 72 ºF until a stable gravity is reached. We also recommend mashing at 148-149 ºF and adding a small percentage of the fermentables (~ 5-10%) as sugar.
Attenuation has also been reported to increase when repitching after the first generation.

    It's no longer Chico time...

    Like so many hopeless hop addicts I've been slavishly sticking to the usual Chico yeast strain suspects for my APAs, IPAs and DIPAs, but having read some good reviews on this (allegedly from an old English strain called Conan) I just knew I had to give it a go. And boy, am I glad I did. The results from my first brew (a 7.5% IPA hopped heavily with Centennial, Amarillo, Chinook and Simcoe) blew me away, for despite using the same malt and hop bill as I've used many times before, the beer couldn't have been more different. To encapsulate this yeast in a few words, the phrase would have to be 'fruity as f***'. I'm not one to talk of peach and mango and citrus rinds when discussing beer, but it's difficult not to with this yeast, as it seems to bring out (or enhance/complement) the inherent fruit characteristics of the hops used beautifully. Give it a go, but be sure to follow the manufacturer's advice on temps, and don't expect it to attenuate like US05 or WY1056. It won't. I've found that an OG of 1070-ish will finish at around 1015 to 1018, leaving a hint of background sweetness that works really well with extremely well-hopped beers.

    Supposedly isolated from "Heady Topper", one of the world's top rated beers. This yeast has a massive fruit forward character, finishing at a slightly higher FG than some American strains and leaving some residual sweetness in the beer. Great for big, hop-forward IPAs and for any beer you want to let the hops shine in.
