Classic German wheat beer yeast, used by more German brewers than any other strain. Dominated by banana ester production, phenols and clove-like characteristics. Extremely attenuative yeast, which produces a tart, refreshing finish. Yeast remains in suspension readily with proteinacous wheat malt. Sometimes used in conjunction with lager yeast and kraeusened to finish the beer and improve the overall dryness. High CO2 levels, typically at 2.7 - 3.2 volumes is desirable for best presentation. This strain is a true top cropping yeast requiring full fermenter headspace of 33%. Increasing pitch rates will reduce ester production. Alcohol tolerance: approximately 10% ABV

    Quick and easy

    Works exactly as it should, the pack swells after the smack and the fermentation kicked off within 24 hours. Big krausen every time I've used it, so I always leave about 30% headspace.
    I've fermented this at all sorts of temperatures - in my experience anything above 22ºc is too heavy on the esters (banana / fruit) and almost non-existent on the spicy phenol clove flavours. 18ºc is a much better balance.
    Took about a week for primary.

    Arrived in great condition - manufacturing date only a few weeks before.

    Used it in a double-decocted Bavarian-style Hefe-Weizen. Gave off a bit of a sulphur smell during fermentation 918°C) but this quickly dissipated during conditioning. Now I'm drinking it after only 2 weeks in the bottle and the brew tastes and smells very authentic - mainly down to the yeast.

    Having mostly used dried yeast before, it was a real treat to try a Smack Pack for the first time.

    They're really easy to use and it's very reassuring when the packet swells because you know for sure that you have active yeast.

    You really have to smack it though! Don't be afraid of bursting the outer packet.

    Would definitely buy the format again, although should have read the reviews because it's VERY active and probably needed a blow off tube.

    This seemed to go pretty mad for the wort and very quickly. I did have a big krausen but no need for a blow off tube in my case. Then again I am using a 30 litre fermenting bucket rather than a demi-john for this so maybe that makes a difference.

    Smacked it in the morning, left on counter to swell and brewed in the late afternoon when it was completely rigid and stiff. Poured into the wort and ended up with it spewing out of the airlock by morning. In other words: USE A BLOWOFF TUBE for the first few days of fermenting with this yeast.

    Flavour-wise it's great, with a delicate taste that lets the cloves and spices come through. An excellent yeast for making German wheat beer.

    This is the definitive yeast if you are making Hefeweizen. Keep at 18º - 21º C for the most of banana esters, or lower than 18ºC to keep banana aroma down. This yeast was very fast to start - my wort was bubbling like crazy in under 12 hours. Ferments the wort dry in 5 to 7 days. I cannot tell the difference in taste between my beer and the best of Hefeweizen I had in Germany. This is an excellent yeast.
