White Labs WLP830 Disappointing production date

    Review by on

Received my yeast yesterday. Really disappointed to find that the production date was July 15th. This gives a vaibility of 76% and means that I shall have to produce a large (almost 3 litre), two stage starter to get to the 416 billion cells that I need for a five gallon brew. I am sure that this will work, but I would rather have stayed with my 2 litre Erlenmeyer flask rather than two seperate starters in the flask and a large glass jar.

RESPONSE FROM BREWUK - Sorry for your disappointment. Whilst we aim to provide the freshest yeast possible and provide the full range of strains it is inevitable that some of the less popular strains may be a few weeks old but we feel that 2 months old is reasonable. Although we did trial publishing the dates of every strain on our website it just wasn't practical as it literally changed everyday. We are always happy to go and check the current stock prod date on any strain if the customer contacts us prior to ordering so you can either change strain or prepare the appropriate yeast starter.

    WOW WOW WOW

    Review by on

Armed with my new FTSs2, I dared to brew my first lager. From the outset this yeast was.....different. Up until now White Labs ale yeasts kicked off after about 6 hours of pitching (with a starter). WLP830....nothing. After 12 hours.....nothing. After 20 hours.....nothing. After 30 hours.....a bubble or so every 30 seconds in the airlock. I thought all was lost. This yeast (like almost all lager yeasts) demands patience. After 36 hours (at the 10 degrees C required).....finally clear signs of primary fermentation. And boy oh boy did my kitchen smell like rotten eggs. Relax...it's normal I read. Slowly.....very slowly the yeast ate the sugar. Compared to the usual 5 days for primary fermentation.....after 2 weeks I finally just about got to an FG of 1015 (given a two day diacetyl rest at 19 degrees C....although it didn't really need it) . The beer was a lot clearer than usual when racking to keg (crash cooling aside). 4 weeks later. Beer is astonishingly good. Crystal clear to the eye and clean, crisp to taste, with a perfect balance of malt and hops. Dangerously drinkable at 6.5% ABV...it tastes a lot weaker. Lovely yeast character; residual sweetness with a soft sulphur undertone. No DMS of note. Be in no doubt, this yeast is responsible for a fabulous lager! The most authentic White Labs yeast I have used to date. And I've used a fair few (they are all really good). Very highly recommended.
