FUNCTION:

Chill haze in beer results from the precipitation of complexed polyphenols and proteins during cold storage. This haze develops over time and, initially, is reversible (haze disappears when the temperature of the beer increases). Eventually this chill haze can become permanent.

Clarity-Ferm will prevent the precipitation of complexed polyphenols and proteins by hydrolyzing the sensitive (haze-active) polypeptides in the region where such hydrogen bonding occurs. The specificity of the enzyme ensures that no other beer parameters are affected.

This easy to use enzyme can be used on all types of brewing materials and is a cost effective product to replace silica gel or PVPP.

In addition to increased shelf stability, Clarity-Ferm has been proven to reduce gluten content in beers made with barely. While currently a beer made with Clarity Ferm cannot be labelled as gluten-free, many beers test well below <20 ppm of gluten.

    I've started using this in every batch I brew since talking to a friend who discovered they had coeliac disease. They've yet to try any of the beers as they live some distance away and I only see them a few times each year, so I can't personally comment on its effectiveness, but all the research I've done and all the tests other people have carried out suggests that it will get the gluten levels well below 20ppm, with many tests suggesting less than 10ppm. I can however say that I've noticed absolutely no effect on the taste of the finished beer, having compared the same recipe with and without Clarity Ferm. For a few quid extra per batch, I can't see any reason not to use it!

    I used this as a clearing agent, with views on a secondary bonus as reducing the gluten levels as I have a few friends who can't handle that very well. The clearing has certainly worked, but not had a chance to share the brews with anyone with gluten issues yet so can't vouch for that side of things!

    I have coeliacs disease so even the worst beers in the supermarket will cost me £2 / 330ml . I've now made my first few barley beers with this and tested with a glutentox kit to find it below 10ppm (recommended testing threshold in presence of alcohol) . This product is great and I highly recommend it!

    I started using Clarity-Ferm to reduce the gluten content in my homebrew beer after I became intolerant to gluten and now would not brew beer without it. It may not work for everyone but it certainly works for me.

    Add when pitching the yeast. Produces gluten reduced beer (10 ppm). Fantastic. No impact on taste or head retention. No chill haze.

    Had problems with early batches of beer hazing, - especially when cooled (making quasi-lagers). Started using WLN4000 and never had a problem since in producing a professional level of presentation. Well worth the pennies!

    i love strong and hoppy imperial ipa. they are,however, ofter a little hazy in my experience. In the last 10 gallon batch I put 2 vials of this in and the beer was definitely clearer than the pervious batches. There was no discernible affect on the taste, but given the hops it would have to be a dramatic effect for me to taste it. I didn't do a double batch one treated one without, but others have, and have also seen the increased clarity, especially in these very hoppy beers.
