Recipes - Hop Back Summer Lightning
A classic, well hopped pale ale. Summer lightning from the Hop Back brewery in Salisbury has been awarded numerious awards and converted many lager drinkers to the joys of real ale. This is one of our favourite brews and is a regular house beer in brew HQ. Perfect for the first time all grain brewer as its simple and never fails to deliver. This recipe from Graham Wheeler is a great representation of the beer and follows the all grain method of brewing but can also be created using extract brewing methods.
To make 23 Litres.
4.990kg Pale ale malt (4 EBC or less)
(assumes 75% effeciency)
Start of boil 46g Challenger Hops
80 mins into boil 15g Goldings
End of boil 9g Goldings
Mash temp 66C 90mins
Sparge temp 77oC
Boil 90 minutes as vigorously as possible
Irish Moss or Protafloc in last 15 mins
Fermentation and conditioning:
Yeast = Wyeast London III or S-04

Fermentation temp 20oC
Should ferment in 7 days
Condition for 7 days at 12oC
Fine and serve 12oC
