Probably the rarest malt of all, Rauchmalz is only produced in Bamberg, Germany and is used to brew that town's world famous Rauchbier. The kilning of this malt takes place over open fires made of beech wood logs. The phenols released from the wood permeate the malt and give it its smoky taste and aroma. Besides making Rauchbier, this unique malt can add interesting flavour notes to a wide variety of beer styles. It is particularly effective in Brown Ales and Porters which were traditionally brewed with traditional brown malt, also kilned over open fires but no longer available.

    Added this to a clove and orange winter warmer brew, early days yet but pre bottling it tasted amazing! Really added that open log fire smoke I was hoping for. Shame I'll have to wait till Christmas to sample it!

    Think I'll throw some in a bock soon to add some dynamic.

    I had always wanted to make a pale Rauchbier, I used this malt as 90% of the grain bill, with Munich making up the remainder.
    I fermented it as a lager but i am not sure i needed to go to the trouble of low temp controlled fermentation. I will try it as a California common style next time as i am sure the flavour of the smoke doesn't need such a well controlled low temp fermentation.
    The beer was superb with the lovely smokey bacon taste I had wanted. Its a great summer beer with an interesting taste.
    I was concerned that the 2 micron filter would remove some of the taste but it didn't.
    Defiantly a beer i will make again and for summer drinking, I will try a darker version for the winter.

    I'm a massive fan of Bavarian rauchbier and fancied trying to make one myself. This rauchmalz is spot on - as soon as I opened the packet I knew it was going to be good! It's got that disntintive smoky-bacon flavour that you get in Schlenkerla rauchbier, and this has carried over really well to the finished beer (in the batch I brewed, the rauchmalz made up 50% of the grain bill).

    The only thing to note is that the malt is much paler than I was expecting (not a bad thing, just a surprise). The rauchbier I made with pale and Munich malts has come out a mid-amber colour, so if you want a really dark rauchbier you'll need to add some roasted grains to darken it.
