Old Master is a dark mild, which was brewed for both CAMRA's mild month and to celebrate the start of the Constable exhibition at Salisbury Museum.

A smooth, nutty, chocolate maltiness with a subtle Kentish hop flavour make this an easy drinking mild.

All the ingredients required to make the HopBack Old Master Recipe.

23g Challenger Hops

9g Goldings Hops

9g Fuggles Hops

165g Crushed Crystal Malt

195g Chocolate Malt

165g Crystal Wheat

2.5kg Light dried malt extract

Choice of yeast - Liquid yeast must be refrigerated.

    Give it a try, it might surprise you

    Wanted to do something different for a change: usually make light hoppy beers, never been into Mild as we don't get it round here, and I can usually take or leave the darker beers. Was surprised at how few hops went into this, but wow - it balances out really well, just a hint of hops and bags of smoky maltiness. It's still very young but perfectly drinkable staright after gassing up the barrel (after a week of secondary fermentation). This is one fabulous beer, possibly one of the best out of 56 brews inc many of the BrewUK recipe packs - well recommended, take a chance and give it a try.

    This lovely mild ale really demonstrates the difference in styles you can achieve from this method of brewing. A lovely smokiness from the chocolate malt gives way to warm maltiness and hints of the challenger hops. It took a while to develop in the barrel. Too early and the complex flavours hadn't materialised, giving the impression that the beer was a touch bland. Don't look for bitterness here, just smooth, warm, winter delight!

    This being my second extract kit with the first being the highly recommended 'Way to Amarillo' this had quite a lot to live up to.

    It has been conditioning for 5 weeks (used the S-04 yeast) and is a really nice mild. Dark in colour but when held up to the light you can just about catch a glimpse of a reddish-brown hue.

    The taste is nicely balanced, with a hint of hops but not hoppy and nice 'n easy drinking dark ale.

    I initially had a taster of it 'green' after two weeks and, unlike the Amarillo which was quaff-able at that point (and kept getting better); the flavours weren't nearly balanced by then and was sweet this time. Having now waiting the correct amount of time, the patience has paid off and I'm finding it hard not to have just one more pint!

    Love this! Delicious full-bodied toasty mild. I will be making this again and again. Possibly my favourite brew so far.

    The yeast I chose was White Labs WLP002 - very straightforward.
