    Very nice lager

    I have made this kit 3 times, always using the Mangrove Jack liquid malt extract in combination with the kit, I also used the kit yeast which is California Common lager (as in Anchor Steam beer from San Francisco). I was a bit surprised at this as I was all ready for a low temperature fermentation with "authentic" lager yeast but went ahead with the higher temperature fermentation anyway. I also used the dry hops as recommended in the instructions without any other additions. The kit has turned out well in every case and is more like proper lager than other lager kits I have tried. It has more flavour than most commercial lagers and the balance leans towards the hoppy end of the scale more than most lagers. I personally like the citrussy flavours from the New Zealand hops, it is exactly what I was hoping for. I gave it around 3 weeks fermentation before moving to a secondary fermenter and adding the dry hop pellets, I took them out after a week and then kegged it. The first batch I tried never cleared properly but in all other respects was excellent. The other batches did clear eventually but took at least 2 months to get there. All batches had a great head and a nice light colour, another pleasant surprise as I find most lager kits turn out darker than expected for lager. Initially the hops were very evident but gradually mellowed out. If you give it enough time - maybe 3 months - this beer will go crystal clear and the hops will mellow to a perfect balance for a craft-type new world lager giving a perfect light golden lager with a great head and wonderful taste.
    My first batch I made a yeast starter but pitched straight from the sachet for the next two batches.
    All batches were fermented under pressure in a fermentasaurus unitank.

    I'd been keen to make a lager for a while and with the new fridge/fermentation chamber set up I gave it a go. I didn't use the kit yeast, but swapped out for WYeast 2278 Czech pils yeast (which I was planning on re-using for a second lager). So a bit of a pils crossover, but turned out crystal clear and crisp with a hint of spice/pepper on the finish.
