Details

The EC-1118 strain was isolated, studied and selected from Champagne fermentations. Due to its competitive factor and ability to ferment equally well over a wide temperature range, the EC-1118 is one of the most widely used yeasts in the world.The fermentation characteristics of the EC-1118 - extremely low production of foam, volatile acid and H2S - make this strain an excellent choice. This strain ferments well over a very wide temperature range, from 7° to 35°C (45° to 95°F) and demonstrates high osmotic and alcohol tolerance. Good flocculation with compact lees and a relatively neutral flavor and aroma contribution are also properties of the EC-1118.

    After the past few disappointing versions of this yeast that I have bought on e-Bay I'm happy that this one works as well as it has. I've used it to brew a batch of Mead and a Honey Beer and in both cases the fermentation is still going strong. I haven't been able to taste the final product yet and in the case of the Mead that won't be until next year but I have full confidence in the quality.

    Having used this in both hot and freezing conditions, it's so versatile that I can't fault it. Great for mead and all those delicious wines!

    (it's very fast, though, so be aware that if you think your fermentation is stuck, it might just be done. Check the gravity over a few days and see~)

    Following a recommendation for this particular strain of yeast, I tried brewing in our cold (~15 degrees Celsius) kitchen - it works a treat!

    Fairly long time to process the order, but once I'd received the "dispatched" email, the yeast arrived the next day.
