Recipes - Hop Back Old Master
Old Master is a dark mild, which was brewed for both CAMRA's mild month and to celebrate the start of the Constable exhibition at Salisbury Museum.
A smooth, nutty, chocolate maltiness with a subtle Kentish hop flavour make this an easy drinking mild.
To make 23 Litres.
4.183kg Pale ale malt (4 EBC or less)
206g Chocolate Malt
172g Crystal Wheat
(assumes 75% effeciency)
Start of boil 24g Challenger Hops
End of boil 9g Fuggles and 9g East Kent Goldings
Mash temp 66C 90mins
Sparge temp 77oC
Boil 90 minutes as vigorously as possible
Irish Moss or Protafloc in last 15 mins
Fermentation and conditioning:
Yeast = Wyeast London III or S-04

Condition for 7 days at 12oC
