    I have been reading other reviews about modifying these kits and so far so good, I have managed to up the abv to about 13% by adding 1kg sugar, 2 litres of pure plum juice and sherry oak chips. took 2 weeks to ferment out, but tasted lovely when bottling. Looking forward to trying a bottle of this at Christmas!

    Cellar 7 30 bottle kits are excellent and make a lovely wine. However you do need to remove the co2 after the brew is complete or else it tastes fizzy. My way is this. I let it brew for 10 days. Rack it to another container, letting the wine splash a lot. This gets it off of the waste. Then wait 24 hours under airlock. Rack it again letting it splash, and then back under airlock for 24 hours. Now you can add packages C, then E the F as per the instructions. After F I wait a further 3 days and rack it off the sediment. I can then bottle it and give it a week and its very drinkable. Gets better after a month by then its better than most £10 wines from shops.

    I have just bottled my latest fermentation of this splendid little number. I added oak chips as well as the 2 litres of our apple juice. Bearing in mind that I usually brew Beaverdale kits ( which I find to be top drawer) this wine is surprisingly good. I started it on 21st December and re-racked it on 1st January. it was still going so i left it a few more days to complete. Yesterday 4th Jan it was naturally finished and gave an SG of 0.993. I added the stabiliser as a precaution, then the clearing process, but it was clear in 24 hours so I bottled 24 bottles of it. A little tip I have is that if you siphon off 24 bottles, and then carry on but into a Demi-John and leave it for a few more days to finally settle before bottling. In a Demi John it is easier to see and gives less waste. You probably gain a bottle that way. Even though it is freshly bottled, it is excellent!
    I ho roughly recommend this wine kit as a wine-rack filler for between more specialist wine makings. My family all love it!!

    I have previously bought more expensive kits, but with so many people drinking my wine in the family, I was always running out!
    The lady at Home Brew recommended I try this wine for a quick replenishment of stock wine. It took longer than the 7 days as everyone said, but I like to ferment on to almost a natural finish.
    I did not add the Oak chips first time, and wish i had but it was a great little wine, an easy, pleasing drink.
    I have just bought 2 more kits and will definitely try the 2 litre Apple juice trick.
    Better than expected - in fact very pleasant.
    I think the 7 days refers to how long it takes to drink it all; not how long it takes to make!!

    I followed a suggested tweak to the recipe by adding 2L pure apple juice and a pack of strong oak chips at the start.

    Despite my previously expressed disappointment with Youngs for the 7-day 30-bottle claims, I have to say I have now had time to sample this wine after some weeks of ageing. All I can say now is, WOW!!!

    I don't know why others are claiming it is low alcohol. Perhaps the apple juice added significant extra sugar but I had a start SG of 1.090. Around 11 days later I had an end SG of 0.994 which by my calculation gives 12.8% alcohol content. Certainly I can testify that drinking the wine seems to confirm the high figure.

    But the taste... for a home made wine it is absolutely outstanding and certainly something I will be making again. Certainly worth 5 stars despite my gripes about Youngs.

    I followed Dave's tips, with my own twist. Added 2L pure apple juice and a pack of Oak Chips at the start. Then followed the instructions. It took 8 days for fermentation to cease, then gave it an extra day for the finings to do their job.

    Ended up with a wine that was 13%, checked and double checked, so I do not know why there is chatter about it being only 10%. I can assure you this will make a strong and full flavoured wine if you give it the time to do so. We are talking 2 weeks!

    This makes a surprisingly good wine.

    Two things disappoint however. Firstly, it takes longer than 7 days to make this, and secondly, it makes 28 bottles of wine not 30 (going by the universal standard of a bottle of wine being 750ml). So why the need for Youngs to mislead people with this false advertising? I have written to Youngs to ask them this question but have so far had no reply.

    This is really easy to do. No a high abv but if you do want it higher just use less water. Takes longer than 7 days, took me about 11. Don't drink straight away, the wine improves significantly if left in bottles for 2-3 weeks.

    It's important to note that this is designed to make only 21 litres, unlike most other '30' bottle kits, (up to 23) and produces about 10% alcohol. This can be raised by using less water. I add oak chips (not included) and a good handful of dried elderberries. To thoroughly de-gass the wine, I use a power drill with a paint stirrer at medium speed. Rather than bottling, I siphon the whole lot into a polypin containing oak chips and leave it for at least a week before sampling. It is not as good as the more expensive kits but infinitely better than the Winebuddy version, which really bears no resemblance to cabernet sauvignon.
    It can be ready to drink in 7 days as it is fast fermenting and clearing but certainly improves in as little as a week later.

    I dont normaly do reviews but this company realy do deserve a review for many reasons , am not going to bore you with a big review of why so hear are a few main reasons. delivery, FAST. cost FREE if your order is over a certain amount, i think its about £60. quality of products excelent, well i have never had a problem and i have been ordering from this company for about 3 years.     Very pleased with this kit. Just as I was about to give up on ever brewing a half decent red wine this kit was suggested to me. Excellent value for money and no fuss. Also drinkable within a few days of bottling. I was so impressed that not only have I ordered another but also the Pinot and the merlot blush kits. :-) just need to find a cellar to store it all now!

    I too tried David's recipe - very good and a better body to the wine, however, had to filter to get the chips out which made it thinner. But excellent taste, still got some laid down and waiting to try it in another couple of weeks.

    I followed David's advice and added 3l of pressed apple juice from Waitrose plus french oak chippings - the result was a fantastic full bodied red wine on the 9th day - Yes, it takes longer than 7 days but the result is still amazing for such a short time. Will definitely do it again!

    A surprisingly good wine after 4 weeks maturation - which it really needs in my view. Why only 4 stars?...
    Well, here's an inexpensive 5 star: this kit plus 3L of good quality apple juice (e.g. Waitrose pressed apple, 3 for £4.50) and a packet of French oak (e.g. from BrewUK) made up to 5 gallons, ferment as per the kit.

    I have made this kit a number of times and the result has been very good each time. It takes a few days longer than the 7 they suggest but it is drinkable straight away and steadily improves. It is not as complex as the Kenridge classic version but it is not too far behind and is much less expensive.

    I have made three batches of the Cab Sauv so far and all have been good. Two small gripes regarding what it says on the pack: it is never ready in 7 days even with a brew belt keeping at it optimum temp (20C-25C); and I object to it being called a 30 bottle kit when it only makes 21 litres rather than the usual 23 litres (when queried Youngs told me it was 30 x 70cl bottles but you would need to bottle the sediment to get even that). Still good though.

    Quick delivery as usual, no worries there!

    Working out at about £1 a bottle, this seemed like a good idea, and ready in a week - bonus!

    Didn't think it would take particularly good, what with the speed and price.

    As things turned out, after the week, it tasted OK. So bottled and 1 drunk straight away, tasted fine, better than some of the supermarket stuff.

    Remianing bottles left over the Christmas period and had another 1 month later - wow, this is great. Recommended.

    Have ordered another kit!

    These kits produce wine of only 10% alcohol, like the Winebuddy range, but use 50% grape concentrate, (about 2.6 litres) and include the sugar, compared with Winebuddy (1 litr) and the 4 kgof sugar required is not included, so the price difference is not much, but the quality certainly is.
    10% abv is below the typical 12% commercial strength wine which you get with the California Connosseur version, but that costs significantly more and takes longer to make. It's superior on account of using a top quality yeast, includes French oak chips and the pack is 50% bigger, presumably on account of having a higher proportion of grape juice, although the exact amount is not specified.

    I have long used the Winebuddy version, which makes a pleasant, light, everyday wine quickly and cheaply, so I thought I would give this one a go to compare and added oak chips (not included). It is ready in 7 days if you remove all the gas before adding the finings but best left to mature for at least a few days, preferably longer. Significantly better than the Winebuddy, deeper colour, more body etc. and well worth the extra, which not so much, as you dont need to buy sugar on top.

    As with other 7 days, they are really 10, 7 to ferment and 3 to clear. This was the same, cleared great, lovely colour, fruity odour, light to medium in body, with a hint of blackcurrant, smooth aftertaste. Can't really ask for more for the money, my dad loves it! Will give it 4 stars for taste but prob more 3.5.... if you want a lighter red, thats easy to brew and drinkable in 10 days, give it a go!

    I thought I would try a 7 day kit as was running low on supplies. Didn't have high hopes but this has surpassed all expectations. Smooth, fruit, clean tasting wine which is really easy drinking, even after 7 days.

    Highly recomended.
