    Lives by its name
    Review by Papa pileon 22/03/2016
Incredibly violent fermentation. I added 6kg of sugar to start and as SG came down added more. Brewed in standard beer barrel and stirred well daily. Kept room constant around 20deg but In early fermentation the barrel went up to 27 deg. So in summer could be a problem. In the end I had added about 10kg of sugar for the 23litre batch and fermented out to SG of 980. Incredible as I used ordinary sugar from Aldi at 39p per kg.. So about 20% base alcohol and so cheap to produce. With yeast, 10kg sugar, charcoal and finings works out about £2 per gallon. Transferred to barrel with fermentation lock for the fining stage. Going to do some more before the warm weather as overheating will certainly be a problem. Highly recommended for cheap base alcohol around 20%.

    Excellent Stuff

I been using Alcotec 48 for a while now to make neutral spirit and it works a treat! Give it 5 days and you'll have a pretty potent wash ready for distillation. I don't recommend using an airlock for the first couple of days as it is very lively and could well blow out the airlock, I suggest using a clean cloth and a large band or if you're really worried use 2 airlocks per vessel (I have only used it in 25l fermentation vessels).
I would maybe avoid using turbo yeasts if you are intending to create a quality, well flavoured liquor however as they often produce slight off tastes due to the large amount of added nutrients and other additives. Carbon filtering usually helps remove the off tastes but will remove the fine tastes of a good liquor too, so it's best just used for a neutral spirit to add flavour essences to later.
All in all I am very pleased with how this yeast performs and would recommend it to anyone intending to make a neutral spirit for flavouring.
