5.2 is a proprietary blend of buffers that will lock in your mash and kettle water at a pH of 5.2 regardless of the starting pH of your water. 5.2 is a proprietary blend of food-grade phosphate buffers (similar to brewer’s salts) that will lock in your mash and kettle water at a pH of 5.2 regardless of the starting pH of your water. 52 is safe for your mash and WILL NOT add any flavors to your beer. 52 will provide consistency of pH in any water conditions, but the most significant gains will be obtained if you are brewing in hard water. Repeatability throughout the brewing process is the key to producing consistent high quality beer. Of all the ingredients in your beer, water is the most misunderstood component. Water is universal solvent for metals, minerals, cations and anions. The quality, hardness and subsequent pH of your water will affect enzymatic activity, solubility of salts, proteins and sugars as well as hop usage and perceived hop bitterness. In addition, water quality also contributes to scaling and mineral deposited on your equipment. Now you have the ability to control the pH of your brewing water under any conditions.     I know its not technically right to use this stuff but it does the job until I get to grips with water treatment. Very hard water here brings out a harshness in my beers, mostly the lighter coloured ones. Since using there is more of a smooth roundness to my beers and I'm now producing something I'm quiet pleased with.

    Take Control of your Mash pH

    Easy way to adjust and hold your mash pH at the ideal spot. No need to mess around and keep checking pH. Follow the instructions, add specified quantity to the mash, then forget about the pH as this stuff buffers it to 5.2. Makes brew-day easier.

    Never worry about pH again! One tablespoon of 5.2 per 5 gallon batch and your water is instantly adjusted to the perfect pH of 5.2, no matter what your starting pH was. It will not add any flavors to your mash water whatsoever. 5.2 optimizes the enzymatic activity of your malt, helps to clarify the wort, and may even help to raise your starting gravities. Also, using 5.2 in the boil will give you more consistent hop usage, and will also keep hard water salts in solution, which will result in less scaling in your heat exchangers, fermenters, and kegs. If you are doing all-grain you add it to your mash water - 1 tablespoon per 5 gallon batch regardless of mash water volume. You do not need to add any extra to your Hot-Liquor tank or Boil Kettle.
