First All Grain Brains SA

Well it's time for an AG [BIAB].I am going for a Brains SA clone .Had a pint when visiting Wales last weekend and it brought back memories of being a student at Cardiff in the 70s .
Picked up this recipe off the web Ran it through BE .Only thing missing was a yeast variety .I would appreciate any suggestion's maybe a WLP002 or a WLP005.

I had a Brains SA recently ... served to me by a proudly Welsh barmaid, as it happens (in Yorkshire bizarrely) ... and when I saw this recipe I thought it couldn't be right ... so I checked on the Brains website (link) to find that SA is made with Challenger, Goldings and Fuggles ... that was a relief, I'd have been a bit upset if the beer I'd had had Cascade and Styrians in it and I'd failed to notice them

I think the above recipe is probably for Brains SA Gold ... is that what you were after?

I thought it was odd to use Cascade for the bittering addition too, but didn't want to say anything for fear of looking stupid...

Also, are you sure your cascade are 5.7%? The last lot I got from the shop here were 8.3%, which is a pretty substantial difference.

Hmmm ... I hadn't even looked at the timings of those hop additions ... Cascade at 90, 60 and 45 mins ... non of them added late in the boil ...

Ah yes now then look you these hop varieties are indeed for the SA Gold [thanks for link philB] .I will have to look into the hops in a bit more detail as I would like to brew the SA original in preference .Picked this recipe up off the web haven't ordered hops yet as I am open to suggested changes Challenger, Goldings and Fuggles as in the original .What additions and when is the next question .Maybe split the brew and try the Cascade and Styrian in half and the Challenger, Goldings and Fuggles in the other ,Decisions Decisions and back to square one on the hops. Anyone actually brewed an SA by any chance ?

Ah yes just checked the cascade and the one I was looking at is in fact 7.2 so will have to have another play in BE .Thanks for the heads up .
