Purity UBU recipe?

Anyone ever tried making a clone of this?

The brewery website FAQ section says to contact them for the recipe if you fancy brewing it at home. I have done. Twice over the last month and not a dicky bird.

So I had a stab at formulating a recipe myself.

Again the website says Northern Brewer and Cascade, but the only 'recipes' I've found online use Challenger and Cascade and judging by various other comments sounds like that's what they used to use. Anyhoo, I've got some Challenger need using up, so Challenger it is!

4500g Maris Otter pale malt
250g crystal (120)
250g wheat malt
15g black malt

30g Challenger (7.6% AA) at 75 min
10g Cascade (7.2% AA) at 30 min
15g Cascade at 20 min
20g Cascade at 10 min
25g Cascade at 5 min
30g Cascade at post-boil steep

S-04 yeast

23 litres
OG 1049
EBC 25
IBU 45

Comments welcome. Am I totally overdoing the Cascade?

I would like to attempt a clone of Purity - Mad Goose at some time in the future.... 8-)

Bit more research leads to slight modification of recipe. Still no email from brewery.

Managed to find out that UBU uses 4% crystal and 10% wheat, so have factored this in and increased the black slightly to get back to the right colour.

Does black have a taste? Never used it before (other than premixed in a TLL AG kit). I'd imagine it's a bit like amber but more so. Is 20g too much?

Also, Cascade is used as late hop in copper and hopback. Challenger for bittering only.

Revised recipe:

4500g Maris Otter pale malt
210g crystal (120)
500g wheat malt
20g black malt

40g Challenger (7.67% AA) at 75 min
15g Cascade (6.5% AA) at 20 min
20g Cascade at 5 min
30g Cascade at post-boil steep

S-04 yeast

23 litres
OG 1051
EBC 25
IBU 41

Black malt is very similar to roasted barley, its perhaps not quite as bitter but you shouldn't notice 20 grams.

I am indeed. Made a bit of a mistake and ended up mashing it too hot (70°). As a result it is a bit sweeter and maltier than I was hoping for. The hops are a bit of a background affair. Wouldn't really know it had Cascade in it. Quite pleasant, but not really much like an UBU. I'll make it again some time with a few more Cascade, a proper mash temperature and maybe a different yeast.

Thanks for posting this recipe, Morrisoff. I'll give it a go perhaps as my next brew, so let me know if you ever hear back from the brewery! I'll drop them a line as well.
I'm struggling to get the Cascade flavour and aroma in my brews recently. Adding more seems to make no difference, dry hopping, adding at flame out, whole leaf, pellet. I wish I knew what the breweries did differently to get such a great cascade-hops aroma.

To really maximise hop flavours you could try hop addition at 20, 15 and 10 mins from end of boil.
25g at 20mins
20g at 15mins
15g at 10 mins
Then do you post boil or FV steep for aroma.

Personally I think you need to increase the charge as you near the end of the boil, sorry OE. ;)

I did hear from the brewery, only to say that they wouldn't give out their recipe and that they would amend the FAQ section to remove the offer. Disappointing, if not really surprising. :(
I think the grain bill is probably OK from what I've picked up from various internet sources. And I've always had problems getting the hop flavour I'm expecting, so that amount might work out for some people. If I do it again I'll up the Cascade by 20-25% and try US-05 for yeast.

S-04 is a hop killer, US-05 would indeed be a better choice.

Fascinating stuff, timely too as am assembling an order to include my attempt at this. Had been considering Wyeast 1028, "A rich mineral profile that is bold and crisp with some fruitiness" Any thoughts, brew folk? :?:
