Quick ginger beer question

Hey Guys,
I really had my heart set on making the ginger beer recipe from the site today. I have all the ingredients but have just discovered I have no champagne yeast as called for by the recipe.
The closest I have is cider yeast, will that work ok or should I forget it and wait till I have the right yeast?

I also have a youngs ale yeast actually, might that work better?

Cider yeast will do the job. Champagne yeast might ferment a bit drier, but the Ale yeast will probably finish sweeter.

Me again with another question
Im ordering my first extract kits this weekend and was wondering what size strain bag should I get? Fine or coarse or both?
