In my quest to use up the freezer full of half packets of hops would this work for a pale ale.

3500.00 gm Pale Malt, Maris Otter
100.00 gm Crystal Malt(light)
100.00 gm Wheat, Torrified
20.00 gm Challenger [5.10 %] (60 min)
20.00 gm Challenger [5.10 %] (30 min)
1.00 items ProtoflocTablet (Boil 15.0 min)
20.00 gm Bobek [5.20 %] (10 min)
10.00 gm Styrian Goldings [3.20 %] (10 min)
50.00 gm Amarillo Gold [9.50 %] (30 min) (Aroma Hop-Steep)

Any suggestions on yeast front? Instock I have: S-04, T-58, Winsor and Munich.
But would be intrested in trying a W-Yeast-but there is so many to choose from.......

    Looks okay to me. I would use the S-04 myself. As far as W-yeast go then I would go for a british ale or ESB but to be honest I'm still working through them. I personally would up the pale malt or reduce the brew length and probably omit the other stuff but that's just my personal preference. I would also probably not bother with challenger at 30min and adjust other additions but I haven't experimented with 30 min additions much, just going by what I have read. I tend to do copper hops then all rest in the last 15 mins + steep or dry.

    That also seems like a lot of Amarillo for the steep, bearing in mind the OG. Gonna be a hoppy one.
