Which Yeast
Hi all.
To date I have only brewed things with ready made kits and although fun want to try doing everything myself.
The other half has recently bought me a few books with loads of recipes in and I now want to get a few different wines on the go. However, none of the books actually say what sort of yeast to use in the recipes! All it says is 5mg yeast + yeast activator which doesn't help me at all.
I know there are different yeasts for red/white wine but is there anywhere that tells you which yeast is best suited to different wines?
I am looking at doing something like peach/apricot/blackberry (not all together!) wines so what yeast is needed?

Hi Chris, I would match up the yeast to the colour of wine you are making. Ie Red - use Red Wine yeast etc.
You can use a white wine yeast for a red wine but it will have a different flavour but experimenting is half the fun.

Drinking:Cascade Pale Ale, Summer Lightning

Same boat. Only used wine kits. This year going the hedgerow route. Will be blackberry, elderflower & sloes (only ones local and free).
I have only looked at recipes on Google so a whole new ball game. Have splashed out on a nice diary to keep notes.

Made the first lot tonight. Peach wine :).
One slight issue though was that when I bought the yeast sachets I thought it was a case of 1 sachet per bucket but forgot about the fact the fermentation bins are different sizes.
At the moment I'm only playing around with 1 gallon mixes but all of the sachets are to make 5 gallons/25 litres.
I presume I am right to virtually divide the 8 by 5 and measure the yeast out accordingly? I put 2g (I know that's 8/5!) of yeast in to the mead tonight and hoping it will go OK!
