Hi,

I've been using the Beaverdale wine kits for a few months now and wandered whether it's better to follow the instructions to the letter or to syphon the wine before finning and after (ie: ferment, stabilise, syphon, finning, syphon, mature, bottle)? I found that syphoning before finning helped speed up the process with a solomon grundy 7 day red wine kit (although despite doing exactly what it said on the tin it took 2 weeks and didn't taste that great!)

    Hi Thud, I normally follow the instructions except that mature the red wines in bulk in demijohns for a further 4 weeks or so before bottling as I find this gives them a better flavour. I also use a filter system so I don't get any bits in the bottles. Then mature for longer (as much as poss) in the bottles.

    Whites seem to be fine straight away, so I just follow the instructions.

    Not done the Solomon Grundy kits so can't comment. Have you tried Cantina as they are really popular?

    Cheers Greg always appreciate advice. Can't wait to try the Vieux Chateaux du Roi, it promises to be close to a chateaux neuf du pape! A few months yet to go though.
