Okay, the recipe is finalised. Downloaded beer smith and actually I've been missing something, its great. So much functionality, really impressed.

Going for a simple Weisen/weissbier

Batch Size: 23.00 L
Estimated OG: 1.050 SG
Estimated Color: 3.5 EBC
Estimated IBU: 15.3 IBU
Boil Time: 90 Minutes

Ingredients:
------------
Amount Item
2650g Wheat malt
2200g Pilsner Malt

40.00g Hallertauer Hersbrucker [3.00 %] (90 min Boil)
20.00 Saaz [2.20 %] (90 min Boil)

Wyeast 3068 Weihenstephan Weizen - 2 litre starter.

Planning single fermentation then bottling after a week or so.

Conditioning:Pale with Styrians
Drinking:Cascade Pale Ale, Summer Lightning

    You'll have to let me know how this turns out, looks like a nice recipe. I have some wheat malt left over from the last couple of batches. How long do you recommend I keep it (it's in a cool, dark place)?

    Hi Tony, I had been using beer engine which is fine for hop/grain calculations but very limited really. Beersmith is so much better. I did have a look at it a while ago but looked really complicated but its actually not too bad.

    Yes never done a AG wheat beer before so thought I would give it a go. Hoping I don't get a stuck mash though as I've heard this can happen when using large quantities of wheat. I guess I will have to bottle this one too but never mind, its always nice to have a few bottles of home brew, especially in the winter when I don't want to go out to the cold garage every time I want a beer.

    Your wheat should be fine for quite a while. Any crushed grain should be kept in a airtight container then it will last for ages, easily a year!

    I've been using a brewing bag in my mash tun - it's big enough to not even notice its there really, and any stuck mash just needs a little 'jiggle' :o)
    Good news with the grain .. I'll have to put it to use :O)

    Yes .. remember the christmas beer I posted .. well I did two 5 gal batches, one with the spice and one without. I did the 'without' first and that should be ready to bottle sometime this week ... been in the secondary for a week and a half and its the first time I've done a dry hop, really interested to see how it comes out. The 'with' will be racked to secondary today sometime also interested to see how the spices are showing.

    Planning to brew the wheat beer tomorrow, got a wyeast in 2 litre starter which is looking good.

    Re made the Rakau Rhino 2 weeks ago and barreled it on Sunday. Tastes amazing already. Really nice flavour from the hops but mild so the malt flavour is really coming through. I'm running a bit low on supplies so hopefully it will clear quickly.

    Good to hear about the Beersmith, it does look full on on the first look, but once you use it it has easy to use features and is well set out, I love the way you can set up your own equipment in it and have it create a shopping list/take things out of your inventory also the log comes in handy!! Basically its every thing you need in one place!

    Dont forget that there is extensions for the software which are all free!!

    Any possibility of a run-through with beersmith? I had a fiddle but reon I am lost! Could anyone step up for a how to guide????

    Okay bottled this one last night after a week and half in a closed fermenter.

    Tastes really nice, more bitter then I expected but I think that will mellow out in the bottles. Amazing tastes from the wyeast, fruity and spicy and very deeply flavoured for such a simple recipe.

    Can't wait until its fizzy and cold as the taster was flat and warm but still delicious.

    Managed to get 38 bottles so not too bad at all. Bottling wasn't as bad as I remembered either. Used 120g of brewing sugar which should give me a nice carbonation.

    Hi Tony, no late hops at all, just some on the 60 min boil. Most of the flavour has come from the yeast as far as I can tell.

    Going to barrel the St Peters samples tomorrow so I'll let you know how that one is turning out.

    Fantastic. Did you try a bottle from Waitrose? I went and bought some last weekend, right after we had the conversation!
    On a (slightly) related issue... Am I just imagining it - or did you have a pale crystal malt which has now gone? I'd filled my shopping cart with a few things I wanted to try next time 'round. Pale wheat malt, pale crystal malt, brambling cross & cascade hops ... and now it's all gone. Of course, I could have been dreaming this ... had quite a bit of work on lately. Could be getting twitchy! :o)

    To be honest I haven't tried any wheat beer recently. I did have a hoegarden a few weeks ago. It was other posts on here that got me thinking of a wheat beer and just sounded different and interesting. I'm going to grab a few bottles from waitrose for comparison.

    We do have a light crystal malt : Light crystal malt and we haven't removed any stock items only added new ones so if it was on there it still is. If you ever want anything that we don't have then let me know we can get hold of almost anything and have deliveries daily so not a problem to order something in for you.

    Bought two wheat beers this afternoon for a taste comparison. Erdinger and waitrose Bavarian Weissbier.

    The Erdinger is really smooth and almost tastless but a nice brew.

    The waitrose Bavarian Weissbier taste almost identical to mine, well will do after a few weeks in the bottle. Really pleased with how its turned out and would highly recommend trying this. That 3068 wyeast has really done the job.

    By complete coincidence we went into to a Waitrose on Saturday (can't usually afford to shop in there!!), and I spotted their Bavarian wheat beer so bought a bottle to try. I had it last night, very nice indeed, far nicer than Erdinger, and preety similar in taste to the one I brewed a few weeks back, colour similar too. Fruit, spice, and malty breadiness.

    Greg, my wheat tasted slightly bitter straight form the fermentation bin, but did indeed mellow out after a couple of weeks in the bottle, so I reckon you'll be fine.

    Hi Simon, yes I totally agree. The waitrose wheat beer had some much more flavour. The Erdinger was very bland in comparison.

    I'm going to leave in until the weekend to try another bottle.
