Hi Otter, I use Carbon Reducing Solution (CRS which is an acid blend) to reduce the hardness and campden tablet to remove the cholrine. I then add Gypsum to the mash and gypsum and Epsom Salts to the boil.
To be honest, I got all my readings from the local water company then use the water treatment calculators available online which alter the quantities depending on what type of beer I'm making.
My water has the following:
Calcium 105 mg/l
Magnesuim 2.2 mg/l
Sodium 8.3 mg/l
Sulphate 12 mg/l
Chloride 18 mg/l
Alkalinity (as CAco3) 271
Works well though and the beer is definitely the better for it.
Fermenting:
Conditioning:Pale with Styrians
Drinking:Cascade Pale Ale, Summer Lightning
