Turbo Cider
Some people don't add sugar, but I do boosts the Alch levels and gives more profile to the cider! I some times add a cinnamon stick or some elderflowers to the simmer for a twist! champagne or cider yeast works well with this recipe
Method
Simmer 150g sugar (brewers sugar works best) in around 0.5L of apple juice for 5 mins
Add 4L of juice to the fermenter
Add the juice with sugar
When below 30 deg c, pitch the yeast, cover and shake well to aerate
Fit airlock.
Add the remaining juice once the yeast head settles a little.

Yeah I also add a few teaspoons of honey.
Although I only go for the 100% squeezed apple juice and not the concentrate as this already has sugars along with water added to it.
I have a 5L bottle conditioning ready for mid November, dont know what to expect! Maybe some youthfull memories!!!

Dan, thanks for this looks good. Think I'm going to try some with dried elderflower or maybe even raspberries.
Quick question. You say add the remaining juice one the yeast head settles down but how much as there is no total amount of juice in the recipe?
Also how long to you leave before bottling/drinking?

I tend to leave it a few weeks after bottling! Its your choice if you prime or not!
I find Lidl's Vitafit Apple Juice quite good for it (does concentrated but is 100%), or Copella Apple juice (on offer at lidl at 2L for £3 at the moment)

As greg says a whole packet Young's Cider Yeast Sachet 5g or Young's Champagne Wine Yeast Sachet 5g work well.

Found myself with a bit of time to myself this afternoon so - inspired by dandan's recipe, I headed to sainsbury's. Hope you don't mind dandan, I changed it a little:
20 ltrs TC (I 'acquired' a few large water bottles from dispensers - says 19 ltrs on the label but it easily holds 20)
16 ltrs apple juice
3 ltrs apple & raspberry juice
Simmer 340g honey in around 1 ltr of apple juice for 5 mins
Add 15 ltrs of juice to the fermenter
Add 1 cup of black tea
Add the juice with honey
Add 2 teaspoons pectolase
S-04 yeast (because that's what I have in the freezer).
Kept a lot of headspace for yeast activity and will add the top up of apple juice after a couple of days.
I completely forgot to take into account that the juice had been in the 'fridge. It's now warming in a sink full of hot water before I can pitch the yeast (started at 13C).
Apple juice was 56p a ltr (It is from concentrate but at that price it's worth taking a risk on it), the apple and raspberry was 1.68.
The trouble with being a teacher is that everyone in the area knows you. In the past few days I've been seen buying 19 ltrs of juice and 19 jars of honey (for the mead). This will come back to bite me at the next parents evening!

Q. Tony - you freeze the yeast?
Ref the apple pressing I hear freezing apples kills the natural yeast so I guess it is ok for dried. Is there a time limit for freezing?

Yes, I put all my hops and yeast in the freezer as soon as it/they arrive(s) - unless I know I'm going to use it in the next day or two - then I store it/them in the 'fridge.
I take the yeast out about 6 or 12 hours beforehand so it can climb up to room temp. I usually go by the date on the packet - but that's a good question. Do you do all your ciders with natural yeast?

Saw it and loved it. In my last abode I planted and grew a bramley tree. By the time I moved out it was producing enough apples for about 30 - 40 gals. I miss that tree.
(Actually I grew the tree in the garden - just re-read that and it looks like it may well have been in front of the TV... or in the toilet, it wasn't :o))
I have to make one of those scatters and presses! I made a red wine last september with grapes grown just up the road - toyed with the idea of using the natural yeast but chickened out in the end.

i have just tried the recipe that Dandan posted at the top but made it with mixed fruit juices, 3.5l apple juice and 1l of Cranberry,Blackcurrant and Raspberry. I just measured it out proportionatly first in a glass until i was happy with the taste then made the quantity to fill the demi, and followed the other instructions then-----------i will let you know the result of my mixed friut cider. cheers for the recipe dandan.

Sounds like a good combination.
I had some apple and ginger juice the other day which worked really well. How about ginger cider?
In fact I'm going to make some this weekend so I'll let you know how it turns out.

anyone know how to take an alcohol reading using a hydrometer? i have just realised that following the recipe above i have dropped a slight bo***ck i added 450g of sugar instead of 150g and am curious to see when it comes out.

Hi Andy, to use a hydrometer take a sample (or stick the hydrometer sterilised straight into the cider), read where the top of the liquid comes up to. Write this down, ideally before it starts fermenting.
Then do the same at then end.
To work out the ABV just measure the two calculations. This will show you how tohttp://www.brewuk.co.uk/store/index.php/measuring-volume
If its not fermented too much then you could probably add 5 litres of apple juice and split into 2 batches. Or just leave it and end with with some rocket fuel. I'm sure it will get drunk and you've only got 5 litres any how.

Hey if we all pile round Andys this weekend we will probably wake up after the World Cup finishes. Avoid the inevitable pain that is coming.... I'm not normally a pessimist but I've seen too many disappointments now to be anything but.

Great way to wake up in the morning folks, reading those comments has put a huge smile on my face first thing in the morning. Kinda the opposite of what andy's cider will do. I remember scrumpy hangovers!
Great idea with going around and watching the footie - with the necessary anesthetic! I suggest you prime it with sugar, make it nice and fizzy and drink it through a straw .. why mess around :o)

just to let you all know how the super-turbo mixed fruit cider turned out that i mistakenly added too much sugar to!
it was quite sweet, but tasted nice! has one hell of a kick to it though, infact i would even say it was more like a fruit liqoure. i have worked out that its about 11% but it does taste stronger.
Anyway it won't go to waste and i am gonna try again this week with the proper recipe.

11% now that's rocking! I had a crack at turbo cider and it turned out at 7%. Used 150g of glucose and 4.5 cartons of Aldi concentrated apple juice at about 58p a carton. Added a whole sachet of cider yeast. Guy at local homebrew shop told me 150g sugar was only gonna produce a cider of 2%. Not sure how he worked this out, but after listening to you guys I thought I would stick to the forum recipe. If I added what was suggested I would have probably have made fuel for an aircraft carrier!

I think i'm going have to kick off some new batches of TC, Think its going to be 1gal of Elderflower using Lidls apple juice and maybe a gallon of of normal TC but with grated apple to see what happens!

I think they chap in the homebrew shop has not calculated the fermentable sugars in the apple juice!! Mine started off at 1.050 ish so should be around 6%. Didn't measure the FG to be honest.
Bottled it on Sat, taste nice, like scrumpy at the moment. No sign of the ginger so I think I'll have to up the amount quite a bit next time or leave it in the demijohn while it ferments.
Still pleased with results so far.

I tried mine last night ... a little sharp - reminder to self: add more tea/tannin next time. Nice and dry but not overly. No raspberries comming through, may not bother next time. Made the big mistake (as its so hot) of putting it in the 'fridge for an hour first - tasted better unchilled.

I would definatley stick to just the 150g of sugar/glucose because the one i did with the mistaken amount of 450g sugar turned out far too sweet, don't think all the sugars turned into alcohol, but it started off at 1.060 and ended up at 0.990.

Tried my first bottle of Turbo Cider last night, really impressed with how it came out, a nice dry crisp flavour, wife likes her cider sweeter so added a wee bit of lemonade to hers and she was happy. Used cloudy apple juice from the CO-OP so even after fermenting for ten days and bottle conditioning for two weeks not expecting it to go crystal clear.
This is definitely being done again, going to experiment with different flavours next time, ginger, cinnamon??

Hi I recently started brewing again after a 20 yr break. Just carried out an experiment last night to make 2 batches of TC using DanDans recipe. First batch using Aldi Rio D'Oro Apple Juice (from Concentrate) the other from the Aldi Rio D'Oro Pressed Apple Juice (i.e Not from Concentrate) using 1 sachet of Youngs Cider Yeast in each. Interesting watching the different reactions of the Juices. I would say the reaction from the pressed Juice is much stronger to the Yeast. Bothe are being kept in the same conditions. Anyway I'll see how it turns out... at 62p and 99p a Litre it's not going to kill me (until I drink it!!)

When I made this I bought a 5lt bottle of water from tesco for 85p, and that's the fermenter. 3lts of apple juice and 1lt of white grape juice. Added the sugar and chanpagne yeast and got some rocket fuel. The grape juice added something really good to it. I recently passed the recipe on to a friend and he's never out of Aldi and Asda now! Using the 3 apple to 1 something else ratio, he's made it with Cranberry, Pomegranite, Pear, Red Grape and a few others with no plans to stop yet. Something about a village barbie in the Summer.

Added ginger to a third of my batch, raspberry and cranberry to another third and au natural (other foreign languages are available) for the rest. All from Aldi's pressed apple juice. Love the ginger (sneaky bottle quaffed) but waiting for spring/summer to drink the rest. Just doesn't seem right drinking cider in the winter.

Update on the 2 batches of TC started 4 days ago. Pressed Apple Juice slowing considerably faster than the Juice from concentrate. Bored of waiting for the fermenting to finish now it seems like it's not gonna stop...

Ive only done turbo cider with the vita fit apple juice from lidl currently 40 odd pence for 1.5ltr at present.
But what happens when you use all juice thats from concentrate do you still get booze but just not as strong?

ok so today took an s.g. reading of both 1.002 for the pure juice 1.004 for the concentrated tried a bit both very dry taste watching to see whether s.g is constant tomorrow think these are going to be falling down water rather than an easy to drink cider.

So having bottled the 2 batches a week ago, today I tried some of the batch made from Apple juice from concentrate. I have to say I really liked it. Nice amount of taste, fizz and well I'm impressed. It was the left over (i.e. the bit before the dregs when I bottled it ) so about 1/2 a bottle (I'm using 1 litre PET bottles). Will let you know how the pure pressed apple juice one tastes in a few days.

Hi
Having done a couple of TC's i was impressed with the results (dry and crisp) but the Mrs prefers her cider sweet (woodpeckerish). Was wondering if adding Lactose sugar say 10/15 gms per bottle would result in a sweeter cider. If this wouldnt work does anyone have any tips to sweeter cider??

I'm sure lactose would sweeten it as its non fermentable, its perhaps not for the purist bit a saccharin tablet might work too.

so I polished off both batches, I have to say I was more impressed with the juice from concentrate batch. So, what to do next...? Oh yeah putting another 10 litre batch on! This time using wine yeast. and my fermenting bin rather than the DJs. Infused the ginger and cinnamon for an hour while cold then simmered for 5 mins with the sugar. OG was 1050.

Hello. Noob here.
DanDan's thread inspired me, so am trying first ever homebrew - Turbo Cider (just apple juice with a bit of cinnamon).
I've cocked up the recipe at the final hurdle, in that I've added the last 0.5 litre of apple juice about 10 mins after the initial 4.5 litres went in. End result is the 5 litre demijohn now has about 1.5 inches gap at the top (i.e. between top of juice level with yeast head on it and very top of the demijohn where the airlock cap is).
Cross-referencing with another recipe I think I was supposed to leave it 24-36 hours before adding the last 0.5 litres of apple juice.
Given I am where I am (i.e. full demijohn 10 mins after adding the yeast), is this likely to overflow or might it be ok? (Apologies for dummy question - never done this before). If the former is there any remedial action I could / should take now / asap, i.e. siphon off 0.5 litres or so now before fermentation kicks in properly?

Sorry it's taken so long but get some outa there, turbocider has a tendency to froth over at the best of times! you can always add half a litre later.

Had been monitoring - fizzing was still vigorous but not increasing in level by time I saw your post, so by then had decided to leave it and hope for the best. Carried on like that for 2.5 days then decreased. Now on Day 8 and about to decant into bottles. Fingers crossed!

Nice, glad to see it didnt bubble over! Make sure its finished fermenting before bottling - it can be volatile stuff!

As much as I like the idea of TC is it really worth it? I can buy 2 Litres of Cider from aldi for 1.99 (5.3%)which works out cosiderably cheaper than the ingredients. I know i could tweak it with other flavours or is it just something people do when they have nothing else to brew. I made 50litres of real cider last autumn bit of a palaver but results appear good at initial quality control check.

Its not all about cost though. I know I started brewing beer kits because I could get cheap beer but as the hobby grows you start wanting to make better homebrew regardless of cost. Plus its also a good starter into the hobby - ingredients and equipment needed is a minimal cost, easy to mess about with and people like drinking it.

I have to agree whilst i love buying ciders i cant help but keep making turbo cider and changing things to the recipe and the fact that my last three batches got up to 8.5 % for £5 for 5ltrs Cant go wrong.
The drinking of something you brewed is allways a great moment i think.

Hi guys - thought i'd show you my recipe as i'm real proud of it (although it's still evolving)
2 gallons Apple and Rasberry pressed juice (this was copella and cost 16 quid)
2 gallons Apple and 1 gallon pineapple pressed juice (this was 3 litres for 4 quid from sainsburys)
1 KG Fructose (tesco)
1 packet of lalvin d47 mead yeast
2 - 4 tsp Pectolase
about a cup of brewing sugar in a keg or in litre bottles 1 tsp each
2 one gallon demijohns
1 five gallon fermenter
bottles or a keg
autosyphon
ok i disolve my fructose in a big steel pan with some of the apple and rasberry and start my yeast in 22C juice . . .
then split the juice sugar mix between my two demijohns and add more juice until 22C,
pitch the yeast and airlock with vodka.
six hours later add half my pectolase - orange foam dies down
three to four days later fermentation slows, so i rack to my five gallon fermenter and add the remaining juice
this goes off like a rocket again, a week later you can bottle / keg with or without the brewing sugar -
it's very tasty both ways after another two weeks,
although the trub in the bottom of containers is very sour and full of pineapple flavour, which some dislike.
Try it - it's quick and easy !

A question. This is the 4th batch of TC I 've brewed and possibly the worst tasting!! I upped the suger level to experiment to 200 gms in 5 ltr demijohn and 250 gms in the other all brewed fine but both my 5 litre batches taste of smelly socks, really is not nice and it didn't carbonate well either. Any suggestions as to what could have caused the truly rank tasting cider?

Hi. Not sure really. Possibly an infection. The sugar levels will have given a high ABV. It might be too high for the yeast to work and that would explain the lack of carbonation. How long ago was it brewed? It might get better with keeping. I sometimes buy 5 lts of farm cider down in Devon, and the real strong stuff is pretty foul tasting. Don't know why I bother buying it. Perhaps it's in the hope it might get better.

Thanks for your suggestion. I brewed them about 3 months ago and to be honest I am tempted to ditch it all. I used a cider yeast and it should have been ok. I think an infection is the most likely cause. But can't work out why. Everything was sanitised with solution and rinsed, airlocks were used . Nevermind guess I just put it down to experience!!

This thread seems like an exciting one.
The wine i'm planning will certainly not be ready/matured by christmas, so i'm looking for something to try that everyone can drink sooner.
I've been informed today that a friend has some unused Demi's I can have, so maybe a Turbo Cider will be a fun (and inexpensive) side project to my wine brewing. I'm thinking christmas spices. Ginger and cinnamon sound like they work well. Maybe some orange peel?

Another batch of Turbo Cider put on the go last night, using Lidl Apfelsaft.
3 Demi's
1 is going to be plain apple, i've added some black tea, and used Champagne yeast (The others are wine yeast).
1 will be topped up with a fruit juice in a couple of days.. not sure which flavour yet.
The final one will have some crushed berries/pectolase added after the initial ferment eases.
It'll be nice to see how each one turns out. As soon as I find a variation I love, I'll get a 23L batch together to keep in stock.
