Tom Tom Wine
Here is a little challenge thats going on on another forum im a member of. Its brew a gollon of Tom wine. Below is a post of my entry.
Right mines underway as well, decied on
2 x tins of chopped tomatos
1 x1ltr Grape juice
1 Kg Sugar
1 teaspoon Citric acid
1 teaspoon Tannin
1 teaspoon GP Yeast
1 teaspoon Nutriant
Put the toms in a bucket then added the grape juice, took a hyrdo reading and it came out at 1.040. Then i added 1 kilo of sugar and topped it up to 4ltrs cooled boild water. Gave it a good stir took another reading and it was 1.120
. Added the Tannin, citric acid (dont know if needs it but what have i got to lose) :D. Then i added nutriant and a GP yeast. Put the lid on the bucket and put it behind the couch with my other wines. Will fement on the pulp for 5 days and the strain the juice into a DJ and top it up with water.

wow, that is unusual... I've made wine from all sorts of stuff... have you ever tried tomato wine? Wine and grape .. what a combination!
How long until it goes into bottles? When will it be ready for drinking?

Blimey even the photo's are red! Like the pint of beer in the background!
Be interested to see how it turns out. Doesn't sound that nice if I'm honest but sometimes the best things come from the most unlikely ingredients. Birchsap wine is mean't to be nice...

Thanks for sorting the pictures out Dandan. And Tony no ive never tried tomato wine and ive not got a clue on how long it will be till its in the bottle. And Greg the red looking pint in the background is my attempt at Waggle Dace, except this turned out to be 8.2%ABV.

Hi itsonlyme What ABV was is supposed to be? 8.2% is pretty killer!

Greg it should have turned out around 5.6%, but for some reason i got a 92% efficiency. I put it down to doing a 2.5 hour mash.

Could you not have adjusted the hop schedule and liquored back at bit? That must have effected the IBU too.
Not sure 2.5 hrs mash would have made that much difference. I've done overnight mashes before without any change in efficiency.

92% efficiency with 8.2% is outstanding.
What was the grain bill... do you feel like sharing the recipe?
Did you spill a bottle of vodka in the secondary?

Tony here is the recpe -
Mash - 2 1/2 hours at 67oc
Sparge at 72oc (single batch sparge 20ltrs)
Boil - 90 minutes
4500grams Pale Malt. (Marris Otter)
120 grames Crystal Malt
30 grames Chocolate Malt
30 grams Carapils Malt
45 grams Super Styrians - 90 minutes
20 grams Cascade - last 15 minutes
425 grames Honey end of boil
Irish Moss last 15 minutes
Yeast S04

Looks like a nice recipe... never used honey in a recipe but saw one that used orange blossom honey and was thinking of giving it a go. Does the flavour come through? I was worried that it might have overtones of mead.

Tony, yes the flavour does come through, but its not over powering.
Have you ever tasted Vaux Brewerys Waggle Dance?

I've used honey in a couple of beers in the past and converted to quite a dry flavour, not sweet like I expected. Nice though.

Yes you can find it in the supermarkets infact Asda are selling it for £1 per bottle at the moment, altho the Vaux Brewer as closed down now but Wells and Young's brew it now.
