Well the sun is shining (most of the time) and I got a pretty early start to get 2 brews underway.

Brew 1:

Recipe: Summer Lightning
Style: Pale Ale
TYPE: All Grain

Recipe Specifications

Estimated OG: 1.049 SG
Estimated IBU: 38 IBU
Boil Time: 90 Minutes
Est Abv: 4.9%

Ingredients:

5000.00 gm Pale Malt, Maris Otter

21.5 gm Challenger (90 min)
26.5 gm East Kent Golding (90 min)
4.6 gm Challenger (30 min)
9.29 gm East Kent Golding (30 min)
9.35 gm Challenger (15 min)
25 gm Challenger (5 mins)
20 gm Challenger (steep 30 mins 80c)

Wyeast 1099 Whitbread Dry Yeast.

Slightly different recipe from GW Summer Lightning but I did this a few brews ago and turned out really nice and smooth.

Gone for water treatment this time as I got the readings from Wessex Water and our water is really really hard.

Water treated (33 litres)

1 Campden tablet
44.4ml CRS added
1.34g Gypsum added to the Mash
2.2g Gypsum added to the boil
5.96g Epsom Salts added to the boil.

I'm pretty sure the hard water is giving a harsness to the bitterness which is definitely noticeable in my pale ales. Wessex water were brilliant. Got most of the readings from the website (after entering my postcode) but they I emailed some queries and got a response within a hour, top service.

Absolutely no limescale in the boiler (which is normally caked after heating the mash/sparge water) so its definitely worked. Time will tell on the tasting.

Brew 2:

Recipe: Simcoe IPA
Style: American Pale Ale
TYPE: All Grain

Recipe Specifications

Batch Size: 25.00 L
Estimated OG: 1.060 SG
Estimated IBU: 60 IBU
Boil Time: 90 Minutes
Est Abv: 6%

Ingredients:

6.68 gm Pale Malt, Maris Otter

10gm Simcoe (90 min)
35gm Simcoe (30 min)
35gm Simcoe (15 min)
12.88g Amarillo (15 mins)
30g Amarillo (Steep 30 mins at 80c)

Wyeast 1056 American Ale Yeast.

Don't think I'm going to treat the water on this one but may change my mind but there is 40 litres needed and I don't have anything big enough. May split into 2 batches.

Got an early start as treated water for brew 1 and measured grain etc last night so first boil nearly finished.

Planning:Maybe a lager.

Conditioning:Pale with Styrians
Drinking:Cascade Pale Ale, Summer Lightning

    Go for it Greg, hope the day is going really well.

    I'm always in two minds with water treatment. I bought some epsom salts a while back but they are still sealed in the container.

    I'm not really a big fan of summer lightning but that recipe sounds really nice ... and the simcoe IPA sounds absolutely fantastic :o)

    I'm still in the process of stealing the experimentation and experience of other people with regard to the Tribute. So many people have tried to nail it. When I think I've pulled the best from it, I'll let you know. Maybe we can so a variation on it each and compare results?

    Thanks Tony. First one is cooling now and everything has hit spot on.

    I've actually decided to delay the simcoe brew as I just can't face doing another brew, fancy the afternoon off!

    Planning to postpone until Sunday as I've already activated the wyeast.

    My attempt at Tribute didn't really do it. The colour was okay but it definately didn't have the same taste. Its just a matter of getting the hop schedule correct. I think the Fuggles is in the copper, then heavy willamette and some Styrians in the aroma with some addition in the last 15. I think 1kg Munich/23 litre.

    After a couple of sub standard brews recently I'm sticking with combination's I know work for a few brews now.

    All in the fermenter with the yeast pitched. Had a sneaky taste and definitely tastes smoother as far as the bitterness is concerned.

    It was also fun learning about water treatment, can't wait for the next few weeks until proper taste time!

    Just used my saturday to brew a kiwi flavoured wit bier recipe I found in a book. Smells great already! Can't wait to drink it on a hot summer evening.
    Is there anything better than a brewday and back toback rugby league on the box? Well maybe drinking it while watching the rugby...

    Well the summer lightning was put in the barrel on wednesday and was tasting pretty good. So good in fact that I had to get a second glass to "sample". Think I may have overprimed it though as I was in a very lazy mood so didn't bother weighing the sugar and had a "sample" last night as it tastes really sweet and really malty.

    Its in the garage now so hopefully it sort itself out. In fact the beer I made about 5 weeks ago (which I didn't really like that much to start with) has really really improved and its quite tasty now. Once again the miracles of conditioning have come up trumps.
