The World According to S-04
Following on from the recent conversations about S-04...
I kinda feel bad about the whole S-04 thing as it's been me driving it. I've had two bad S-04 brews followed by several email conversations with Fermentis. They have been fantastic and offered suggestions - but are unable to pinpoint the problem.
I can report that my latest brew with S-04 is good ... actually, it's outstanding
I'd say there could well have been an issue with a small batch, I also feel that there could be an unusual amount of a certain wild yeast - as I mentioned on Greg's post recently.
So where do we go with this? I'd suggest that we all forget it to be honest. S-04 is an outstanding yeast which gives consistently good results whilst being so bloody easy to use.
Comments welcome and invited but I will continue to use it and it's always good to hold a few packets in reserve

I should also add an apology to Greg here as I know my email to Fermentis was copied to him as the suppplier of the yeast.

Perhaps we should throw out any S-04 we have, and start again with a fresh supply. Maybe the problems are confined to a single batch and new supplies are OK.
Planning: - To get some more brews on now the weather's a bit cooler
Fermenting: - Ginger Beer experiment
Conditioning: - A normal bitter with Styrians
Drinking: - All of it!!

I used the last of mine on my last bad batch but I'll defo give another brew a shot with S04. I now have 3 brews fermenting and conditioning to build up my exhausted homebrew collection. As soon as my beer stock is back up again I want to do another S04 brew.
Companies don't make a success out of creating bad products. I think we stumbled across a rare few packets which out of the masses of great brews I hear people have made with S04 is a very small minority.
