It never fails to amaze me, after years of home brewing, the difference a few weeks and even days can make to a brew.

Home brewed beer changes so much day by day that beers that you think are okay, turn out to be great and then (sometimes) can be okay again.

Its one of the most exciting things about home brewing, seeing how the beer changes.

I keep changing my mind about brews as they progress, more often that not in a good way.

There is really nothing better than home brewed beer.

Planning: IPA of some kind + another bitter + Xmas Beer
Fermenting: FFF Moondance
Conditioning: I can't remember (Porter)
Drinking:Turbo Cider, Ringwood 49Er Clone, Summer Lightning, Elderflower Champagne

    completely agree!

    The only beer I've made recently that seems to get 'worse' with age is the single hop - bramling cross brew. The sweet fruity taste from the bx really would benefit from much more bitterness.

    Having said that, there really is nothing better than your own beer :o)

    Um, I didn't get on too well with the bramlings although mine did get better as it aged. I was also drinking it very cold (jan) which didn't help.

    One of mine (which was still cloudy on Saturday) was crystal clear last night. I must admit I do prefer my beers crystal clear. I always feel they are inferior if they are a bit murky even though they taste pretty much the same.

    I always pretend that it doesn't bother me .. but as you say, it's lovely to pout out a crystal clear pint with a nice head. I'm never disappointed however if the beer is a little cloudy if it tastes good :o)

    I gota say these last few brews I have done I have only had snippits and still have 2 full kegs for about 4-5 weeks now. I must buy an immersion chiller though so I can get a good cold break and reduce chance of infection (see next post)

    I would just like to add that after what, nearly 3 months of conditioning my 6x clone smells and pretty much tastes bang on, just a hint of aftertaste which may well be the type of yeast used. I wouldnt brew it again but it has proved 1 thing.

    I have to agree... My summer ale is getting better and better as the weeks go by. It's clearing now as well which is even better. Oh the taste is sublime as well i will certainly be getting this one again in the future...

    Am i the only one? But my other half really enjoys getting involved with the brewing. Perhaps i'm an enigma? i don't know? Question is when i upgrade my kit and take over the kitchen will she have the same enthusiasm? i suspect not.

    lol .. yes indeed. I remember my excursions into kits/extract and the missus seem to 'enjoy' it :o)

    Now she really looks forward to 6 hour brews :o)

    I'm like the idea of 6hr brews i must admit. If it gets me out of the house work then who am to complain?

    Just finished bottling 42 bottles of Summer Ale! On top of a days work it was knackering, but very satisfying. Now to sit down and enjoy the weekend.

    BTW: The little bottler is worth every penny barely spilt a drop! Now to finish the labels.

    Little bottlers are great. I can't imagine how I ever got by without one. In fact I barely did without trashing the kitchen.
