With the leftovers from the Twibute Act, I looking at making a Thai spiced IPA. I've seen ginger and lime used in others but liked the idea of a hot, citrusy, spicy pale ale.

I'm thinking about putting all the spices in a bag and steeping for 30 minutes post boil. All will be dried apart from the ginger so would it worth boiling the ginger for 10 minutes first to make sure it's sterilised? Would steeping be enough to extract any flavour and any comment on the quantities?

Any advice would be great.

    Looks good to me although difficult to say how it will turn out. I like Hopback Thaiphoon which has lemongrass and coriander in so hopefully it will work. Steeping should do the trick. May well overpower the aroma hops though so maybe leave them out?

    Irish moss is usually 1 teaspoon per 25 litre in the last 15 mins. Not used it in shorter brew lengths so not sure if you need to reduce the amount.

    Thanks Greg. I think it's suck and see on this. I just like the idea of the citrus flavour with a chilli kick.

    I've never used Irish Moss before so I'll just look at the instructions when I get it.

    Just cracked open a bottle of this. It's only been in the bottle just over a week but I wanted to see if it's drinkable or destined down the drain.

    Well, much to my surprise, it's not bad. It's kind of like a lager and lime but only a hint. A little bit of ginger is coming through but there's no chilli or lemongrass.

    Nevermind. It's better than I could have hoped for.

    One thing though. I dry hoped with Bobeks in the secondary FV and the smell on pouring was fantastic!

    Will be doing that from now on for all my hoppy beers.

    I think next time I'll only put the spices in the secondary rather then steeping after the boil.

    I dryhopped with stryians (same family as bobek) and I agree they smell lush.

    Conditionin'/Drinkin' - OPA Pale
    Conditionin' - LEB Pale
    Conditionin' - Thwaits Nutty Black
    Plannin' - A user upper!
