Hi peeps,

Well after managing to brew Tony's Twibute on sunday I had the thirst for more and as I had to go into work at 2am thismorning I thought i would tryout the overnight mash!

To be honest its a great way to do a brew. I stuck it on at 67c at about midnight and woke up this morning about 8 and checked and the temp was 57c so 10c loss overnight aint that bad! So far ive hit all my targets so heres hopeing

Anyhoo I have promised myself to do a styrian recipe for ages. It's all the rage on a few boards and the orig. recipe has won a fair few homebrew awards. The recipe has become changes over the years and there is so many styrian stunner recipes so I thought I would make my own based on whats going round and then also make the first recipe later to compare.

    Nice one Nath, looks like a wonderful recipe! You'll be able to get a real feel for the hops and exactly what they're capable of!

    I'm going to try an overnight mash on my next brew .. but still a little worried about the high temp atthe moment... may wait a little while.

    I know what you mean. Stupid really as I have a brewfridge to control fermentation temp but I always prompt for the cupboard under the stairs! I must admit I am getting more and more paranoid about my outside brewing, if a lump of black weird crap can get into my beer without me really noticing what kind of mini beasie bugs could?????

    What's the purpose of the overnight mash. Is it just to break up the brew day or does have an impact on the wort?

    Right - Job done!

    Eff was slightly up at about at 71% compared to 68% Dunno if that was cause it was overnight or I did a weird fly sparge. I ran the boiler into the tun with tin foil on top to not distrub the bed and just let it run out at the same speed, so sort of fly sparging but the whole process of sparging took about 10-15 mins.

    I had a big boil over (because I was typing on this forum ) so I probably added about 4 lts to make up for it and evapouration during the boil. This gave me 25ltr instead of the planned 23! So 25 ltr of over target (1.041 instead of 1.040) beer! Spot on.

    My total eff is 77.06% so im well chuffed. The overnight mashing is great as it takes a few hours off the process the next day.

    The beer tastes great out of the trial jar and pretty clear. Those styrians smell great when they were steeping away. I may not dry hop depending on what it tastes like from the fermenter (as we all know you gota check those gravities!) I am using Danstar Nottingham as a fair dew people say its comparable to the us-05 yeast which really brings out hop flavours and its a well compacted yeast.

    Great brew day .....Now..... Off to work

    On the subject of offices, I've just moved mine - much nicer, quiet and my view is of a little hill with a tree on the top .. all together now: Ahhhhhh

    I'd still rather be pretty much anywhere else in the world however.

    On the subject of offices.. hmmm mine looks over on another industrial estate, followed by a duel carriage way, followed by a sewage farm...!

    P.s forgotten how strong Shepherd Neame - Spitfire was.... now feeling very tired and hic! dare i say drunk?

    I was well pleased with the efficiency Tony. Pleased enough to get to a pub tonight and have some proper ales baby.

    It smelled great pouring from the kettle so high hiopes and all that. The last 2 recipes where I just used what I had were a little too hmmmmmmmmmm and sometimes HMMMMMMMMMMM. So its good to get some tested recipes!

    The smell from the fv is literally "stunning" so im uber happy with the beer at the mo. Tony's Twibute is in secondary with a bag of bobek in it so all is GOOOOOOOOOOOOOD!

    Love Spitfire, wonderful pint. I'm also rediscovering Bishop's Finger (ooo-err), lovely pint too.

    Their Early Bird ale is lovely too.

    It's funny how you forget what some beers are like.. you don't drink them for ages then have one or two and it's glorious.

    Would love to go on their brewery tour...

    Yeah I know what you mean. That's happened a few times to me recently. With so many beers to try and tend to buy one's I haven't had before and current favourites so over look one's I've not had for ages.

    Spitfire is a classic example, used to drink it all the time a few years ago but hadn't had one for years until the other day when there wasn't much else in the shop I went to. Tasted great and back on my current favourite list. Same thing happened with London Pride and Abbott.

    I must admit last time I had a Bishops Finger I really didn't enjoy it. Tasted far to strong for me but may have been my taste buds at the time. Not tried Early Bird as I haven't seen that one in the shops but I'll look out for it.

    Early Bird is lovely but not around long as it's a seasonal ale of theirs. Mind you i can recommend Whitstable Bay Summer Ale very quaffable..

    I am not a fan of Bishops Finger either like you Greg find it far too strong in taste. I've not had a decent pint of London Pride in ages. Last pint i had cost me £3.80 was too cold and came with a huge creamy head on it. Not a good advertisement for the pub or the beer.

    Will be at a beer festival this weekend so will see what ales they have on...

    'twas the last day of the year yesterday - went t' pub in afternoon and got drunk on Country. Didn't even know that was possible.

    Must be getting old! On the plus side however, I don't have a hangover this morning and that's a first!

    Right guys, this is in a keg and I thought i would have a sample when I was syphoning. WOW - great smell from those styrians and it tastes really grapefruity. One of the hoppiest I have made. Cant wait for a few weeks when its cold conditioned.

    Well got back home and zoomed to the brewfridge to check on me babies, poured off 1/2 pint of the s/s and although its not clear, what it is is the hoppiest smelliest beer I have produced. It smells amazing and tastes really nice. I cant wait for this one to condition properly its gonna be grrrreeeeaaattt (to quote breakfast tiger)!
