Hi All,

I bottled and kegged my St peters 3 weeks ago - 12th of Feb.

I could not resist, opened a bottle to do a taste test, its getting there bags of potential.

Real stupid question, how red should it be, it looks amber with a red hint, nothing like I was expecting, my wife says I am being pedantic and its red, ish in my opinion.

Thoughts around colour being:
1. does that mean it did not ferment properly
2. did the hops not kick in
3. does colour have any indication on flavour/quality

Its not cloudy that's for sure, but wondered if anyone else had done this brew and what the outcome was?

    Hi Bloodsmith, I did one of these in December and last time I checked (about 4 weeks ago) it will still a bit cloudy. Mine was more browny than red and quite dark. Tasted very nice though. I'll have to get another sample and report back.

    Oooooooo Keep us informed on the progress. I've been tempted to have a go at the St Peters Red. I've had it out of bottles from the brewery and boy is it a nice ale.

    It's a beautiful pint!

    I wouldn't worry about the colour.... if it tastes good that's all that really matters in the long run. Most of the colour comes from the grain/extract. If it's not post-box, glow in the dark, frighten the children type red... what does it really matter. That potential sounds good .... you'll have to keep us informed!

    I've just tried another "sample" tonight and its not too bad at all. Quite dark and malty, not that hoppy.

    I must admit though its not a patch on the AG beers I have next to it.

    I started too late so I only got the bitter on. I will be postoning the lager until I find the sourse of the infection as I dont want to lager in the brewfridge until I can rule out that as a possibility.

    Nightmare. I am kegging the bitter tonight so fingers crossed! Finished at 1.005 so I will bee scooping that yeast and recycling that bad boy!

    FYI:

    Opened a bottle for lunch, its clear, and lovely, my brother in law and I both loved it. His neighbours wife went nuts, thought it was awesome and would not believe its homebrew, just pulled one out the keg and pretty pleased so far, will struggle to hold off another two weeks to give it the full 6 week wait.

    To all those who wanted to know, very pleased with it I would recommend givin it a go.

    Its reinforced my thoughts if kits are this good extract and AG must be amazing.

    Well done on the kit mate. Even though im an ag man I have a whery on stand by - just in case! Saying that if the St Peters is that good I rekon it could be my next stand by!

    Nath, whe you talk about 'scooping yeast', do you mean collecting and recycling the yeast? Can you explain a bit about how you'd choose a good yeast to keep and how you keep it?

    Its the first time I done it so im not the best person to ask buttttt.....

    Basically the bit at the bottom of the bin after the beer is fermented is yeast n stuff so I put it in a sterile container to use again. I just kept it in the fridge.

    Hi there. I would only bother storing the more expensive liquid yeasts as it not worth it with dried yeasts.

    They will keep easily for 2 weeks, if storing longer than that then just make up a starter to get them going before you pitch.

    I'm having another pint of this tonight and its actually very nice. Great hoppy aroma, especially for a kit and nice easy drinking.
