Evening all,

About 6 weeks ago I brewed up the St Peters Ruby Ale kit. No real issues making it up, only thing that happened was stuck ferment which was sorted pretty much the same day I noticed it. Racked, primed and bottled then left for over a month to condition (which was painful as Ruby Ale is my absolute fav).

Problem I have now is it tastes harsh. Not an 'off' taste or anything like that, the only way I can describe it is it tastes like i'm chewing the pack of hops that comes with it. It's that bad I can't drink it and it's going to end up as 40 pints down the drain.

I'm a bit confused as to what has happened. I doubt very much it was the kit as I have heard good things about it. I followed the (vague) instructions and have made a number of kits before without problems. Anyone have any ideas what could have caused this? Could it be the stuck ferment or just an 'off' batch?

On the plus side this gives me 40 extra bottles to fill using my new AG kit and I have a 3 day weekend coming up

    I think hop flavour tends to mellow with age which most people don't want but you probably do.

    I had a Fixby Gold kit which came with a hop bag. It smelt very stale so I chucked it and used some frozen hops I had. Maybe the hops provided were a bit mank (technical term)!

    I had exactly the same thing. I've left it now for about 3 months and it is better but not brilliant I must admit. To be fair it pushed me into partial extract brewing (not got around to AG yet...)..

    I think it might be a good call that the sachet was a bit mank. I love hoppy beers so maybe the sachet was stale.

    That bloke sounds like hes off his head when he speaks normally, so maybe a bez-starin of yeast is a good thing!

    That I said I do love them. Seen them live a few times... still think they make good records

    Shaun Ryder is going into the Jungle apparently... that could be funny if I can bear to watch.

    Shaun Ryder up The Jungle. Oh God help us! John Lydon was bad enough. On the other hand, he should be OK eating... well.... just about anything really.

    If you're not living on the edge..... you're taking up too much space!!
