Should I start this weekend ????
Good morning one and all. Yesterday, a big box with a Barrel, Fermentatin Vat, lots of other bits and bobs and a Wherry kit arrived. I'm a virgin at this beer making malarky and have a fermentation question.
Obviously I want to get this kit started, but have read that the fermentation will take a week. Now, as I will be away next weekend, should I wait a couple more days before I start it? The FV will be in the garage which is un-heated, so will it take a week to ferment or a little bit longer. The temperature the coming week will be about 60-62f (15-16c). Recommendations please.
I will no doubt be back when the first stage has completed to ask for advice about the secondary bit.

When I did my kit beers I left them in the primary for 2 weeks (as per John Palmer's suggestion). He thinks there is little to be gained by racking off kit beers into a secondary and that they will benefit from being left in the primary for 2 weeks.
I would bring the beer indoors if you can and wrap it in something that will insulate it from the cold, a blanket, sleeping bag, etc. You need to be in 18-24C range to get proper fermentation.
I'm not sure if slower fermentation will have any undesirable effects. Maybe someone else will know that one.

Hi grumpy,
The beer will be fine in the primary fermentation vessel for upto 14 days but it will need to be somewhere warmer as Simon says as if you dont fermentation may not start or will take longer to kick off increasing chance of infection.
So YES - Get Brewing!

Cheers guys, I've just ordered a belt to ensure the brew stays warm, so I'll wait until the belt arrives before I start the fermentation. How far up the FV should I place the belt as the weather isn't too cold.

get a stick on thermometer, try the belt half way then move up to make it cooler or down to make it hotter
