Sharps citrus ale (tinkered a bit)
Well the missus has been very kind and not only allowed me on a bender last night but has even taken the darling kids to grandmas so I can do a brew. Life IS good!
So I decided to do the Sharps citrus ale recipe from the brewuk recipe section. I have had to scale it down to 23 ltrs and I have tinkered slightly with the recipe, a little bit less brewers gold and a different yeast.
I will be batch sparging this one as I want to see how different it is to fly sparging so I am taking Tonys advice and Im gonna do a single sparge which should save me some time.
Im also adding water treatments to try and replicate a dry pale ale stylee so I will see how that goes.
Heres the slightly tinkered with recipe, I used Pilgrim as my first hops as I had some left over and they are 10.9aa

Boil 75 minutes as vigorously as possible
Leave hops to sit in wort after heater off for an hour before transferring to FV. Fit cover to kettle while you do this.
Crash cool to 20oC ASAP after stand
Cool, well the mash is mashing as we speak, I just hope we have no more rain today so I dont get wet like I did last time!

Nice one nath, looks like a lovely recipe... I like the changes you've made too. If it was me, I'd up the IBUs a little but that's cuz I'm seriously turning into a hop-head. I think next brew I do, I'm gonna skin a leaf up or two and smoke 'em!

Funny thing about the IBUs on this one, I tried gregs one he done a while ago and WOW the ibus arnt needed its like a party in your mouth and nose with this recipe.

It would be good to compare them. Not sure mine will last that long but I may bottle a bit of it.

Mine looks really light compared to yours greg, did you add any other malt at all?

No but mine did come out very orange which I wasn't expecting. Not sure why to be honest, I thought it was the hops.

Well my first batch sparge effeciency came out at 68% and I reckon I made some big school boy errors. The runnings were never clear and I think it was due to the fact I opened the tap fully and just let it gush (after some recycling).
Still it was ok at the end as I got an awsome hot and cold break, loads a grey matter (not brains he he he) stuck to the mass of hops and the wort was pretty bright comming out of the boiler.
I made 32 ltr of water ready and ended up with 20 lts, so I was missing 3 from the boil off and the rest sucked up by the absoloute mass of hops in this brew! I had to use just plain tap water as I didnt make enough. Bum, I hope it doesnt spoil the fact all the other water was treated.
I forgot to check the ph of the mash though until I poured the sparge water in and of course it came up higher than it should of.
Anyway aside from those points and the fact it was (yet again) raining on my brewday all is good and the brew smelt great.

Well I have taken a sample to see what its fermenting like and since sunday 5pm ish its dropped from 1043 to 1020. It smells really nice, very citrusy. I obviously had to drink the sample and at the moment it tastes amazing, really really amazing, mellow yet right in there so I cant wait to see what its like when its finished!

Just a quick update - fg is near and the taste has changed. Its got more hoppy, really Mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm. From early signs its a goodun!

Well its in a barrel and a few bottles now. The fg was 1.008 which is great as I was expecting 1.011+ it smells great and I cant wait till I can try try a bit!

Hey nath... I was just reading the recipe again, you'll have to give us some good tasting notes as I'm really considering doing this. I don't think I've ever brewed anything with such a low IBU.. may have to up it a little to around the 30, but all those aroma hops sound fantastic!

Well the keg I got it in has been giving me jip. I've gone through 2 washers and its finally sorted on its third! I must have over tightened as the white washer (budget keg) was well distorted both times. Still just fingertip tight and its sealed and theres some pressure ioj there, I will give it to tomorow then slap her in the brewfridge for some cold conditioning.
I will have to draw a wee sample from a bottle tonight/tomorrow just for scientific purposes, of course.

As I forgot to say what this beer is/was like I shall say it now.
This beer is good.
I would dry hop next time and like Tony would probably up the ibus a little, but a really nice, light summer ale.
