Looking good Greg! Sounds a fruity brew!

Be good to compare the differnt hops that people use and how they work together looking forward to my brewday! and tasting the beers!!

Yes, it I'm hoping it won't be too fruity. The yeast should give it fairly dry flavour and the Rakau is a bit like cascade and not too fruity. I'm hoping for lots of flavour and aroma without too much fruit flavour but never used the Nelsons before so not quite sure what they are going to bring. I know it won't be subtle that's for sure but just hope it works. The ABV should help carry strong hop flavour and aroma and the high IBU should also help give it s dryness.

This is one is a bit of a risk but where's the fun in making the same old safe brews.

The various brews are certainly shaping up to be quite different so looking forward to the comparisions.

    Planning:Maybe a lager.

I've changed the recipe as I want to try adding most of the hops with in the last 15 mins to maximimise hop flavour and aroma. I may still change to the balance further and decrease the boil hops even more... If I dare!

This one is a risky one but may just work!

I've spent the last hour working with BeerSmith changing, adding, removing etc. I was reading a lot last night about progress hops ... I'm thinking of giving them a go for aroma!
What IBU are you aiming for?

I haven't given a brew this much attention in ... well, probably since the very first ones I made.

    Love that Dan!
There is another option though... Get rid of the 'stockphoto' crap on it with photoshop... Not perfect, but it may be ok for you when scaled down.

Great thanks Tony. That looks brilliant. I've sorted the link for you. You need to enter like this:

{img src=http:/blah.blah} obviously replacing {} with <> with no "" round the web address. That should work everytime.

Dan - yours is cool too so thanks.

Okay this one is in the fermenter, I've adjusted the recipe above to the final version. Ended up using the rest of the Rakua as the steep hop as thought I may as well use it up rather than open some Amarillo and they smell fairly similar anyhow. I also used Maris Otter low colour as I haven't used this before.

For some reason only ended up with just over 19 litres but I think I lost a couple of litres to the extra hoppy trub as started with the same amount as usual in the boiler and added back 3 litres (as I normally do). Anyway, not the end of the world and its already got a nice think foamy yeast head on it. The activator wyeast are definately a lot easier to use. Ready in 3 hours and no need to make a starter.

So plan from here is 4 days in the primary, transfer to secondary (and I may add some gelantine at that point), then 1 week in there and bottle up with 110 grams of sugar. With that gravity I think this one will want 6 weeks in the bottle really, so looking at first week in March although I'm sure I'll have a sneaking preview or 2 along the way.

Smells really hoppy at the moment.

Started heating water at 8am and was all done by 1.00.

    Planning:Maybe a lager.

I think I may try the pale maris otter next too if they're in stock :o)

Me too. Both hops smelled lovely, quite similar, like a mellow cascade. Yes the low colour is in stock and will be a permanent feature. I'll use if it nothing else!!

Just had a sneaky taste and its coming along nicely. Like the Nath and Tony, it doesn't taste as bitter as I was expecting but I think that due to the ABV. You can definately tell its a strong brew but the bitterness smooths out the high ABV. Not smelling as hoppy as before, more malty but I think I'm going to resist the urge to dry hop but I may change my mind. I'm also giving the finnings a miss as I'm sure this will clear well in the bottle. Its already fairly clear.

All in all, so far so good. I'm going to leave in the secondary now until next weekend then bottle.

    Planning:Maybe a lager.

I had another "Quality Control" sample of this last night and its tasting amazing. Really hoppy flavour with a very smooth bitterness towards the end. Almost clear after a week.

Its going to be hard to leave this one alone. In fact I may have to knock up another batch of similar, perhaps changing the hops slightly but same addition schedule.

    Planning:Maybe a lager.

sounds fantastic and that sounds like a good idea with another batch!
Do you have a recipe for tanglefoot? I managed to find out that the hops are challenger and northdown, but no idea of timings. I believe there's only pale malt added but the colour would seem to suggest a little amber or crystal too. Any thoughts?

    Found this on Jims:-

TANGLEFOOT 5 gallon batch OG 1048 ABV 5.1% 24 EBU

    PALE MALT 3510 gms
    SUGAR 770 gms

    HOPS 90 minute boil

    CHALLENGER 18 gms
    NORTHDOWN 10 gms

Add 20 gms NORTHDOWN last 15 minutes.

    YEAST of your choice.

That said even the bloke who done the recipe says its lighter than he remembers. If memory serves its slightly golden orange so it cant be much of a 2nd malt addition. Then again what do I know!

I dunno about the sugar addition. My 6x clone (which is taken directly from wadworths) states some sugar to be added and the taste was a bit homebrewey to me. Not like the other ag's I have done. Could be a problem with the way I brewed though.

If you do it or find a good recipe that tastes like it make sure you post as its my fave beer!

I think the problem will be the yeast. All badger beers have a very distinct, melon/fruity, taste which I think must come from the yeast as you can taste it in most of there beers. The Wyeast ESB would probably be a good contender.

I know what you mean about the colour of tangle foot, its definately got an orange tinge to it, maybe a very small amount of crystal. Why doesn't someone call the brewery and see if they will shed some light on it. I would definately like to try and make some too.

    Planning:Maybe a lager.

    Thanks folks!
I think I may go for this as soon as I manage to convince the other half that I need to do another brew!
I think that's a great suggestion with the yeast and you're right about badger having the distinctive taste.

I was thinking the same about the sugar Nath ... I really don't like using it but looking through books of clone brews, nearly all my fave brews have sugar. Cheapskates!
