Hey,
I've got my second beer kit on the go at the moment. The first kit was ok but was a bit too fizzy for me - I prefer flat beer. I'm going to bottle it soon, can I leave out the priming sugar or does it have a function other than fiz? If I want flat beer should I be putting it in a keg instead? Talk of CO2 canisters put me off and I have all these bottles now...
I've enjoyed this little project but I suspect this will be my last kit. It's too easy! This forum is great and has sucked me in to the world of homebrew!

    If you barrel your beer it will not really be fizzy at all (unless you use cornelius kegs) i normally keg ales and bottle lagers. I suppose you could use half or quarter the amount of sugar to prime the bottles but I have no idea what kind of carbonation it would do.

    Thanks for the advice (and the super speedy reply!!).
    I bottled 20 bottles with 1/2 tsp sugar - as the recipe said and did 10 with half that and 10 with no priming sugar so we shall see...
    I think I might have bottled too soon, it seemed a little lively. Tasted great though.

    According to Graham Wheeler, a well made beer doesn't need priming if it's left long enough. I for one don't have the patients to wait!

    I've seen hat argument elsewhere, that beer will carbonate itself given enough time, but I've tried it and I know others have. It didn't work for any of us.

    There's nothing wrong with uncarbonated beer if you like it that way!

    Beer will get you through the times of no money better than money will get you through the times of no beer

    Update: The fully primed ones were too fizzy, but the un-primed ones were lovely. I've mangaged to drink even the fizzy ones though.
