TonyPlanning: Big Beer & Small Beer

1 year ago | Tony (Member)

HI all
I'm planning my next brew (well .. I'm always planning my next brew..) and thinking an overnight mash for a 50 ltr brew. Big beer up front, straight out and into the boiler - no sparge. Then whilst that is boiling, sparge the grains for the small beer. So, 2 x 25 ltr batches, the second being just the sparge.

Will aim for a high hopped strong beer for the first and a light crisp quaffing ale for the second.

What are your thoughts, is this possible? I was reading a while back about big and small beers - or table beers. This this will work? I suppose I could add some sugar to the second if the reading is a bit low...?

Ive never heard/seen of that but fair play to ya for doing it. I suppose it could work. I take it the last brew will be a lower og?

Yes, it should be and the first is going to be something pretty heavy I think, probably up around the 9 or 10%

I'm really looking forward to it. I know that 100s of years ago this sort of thing was done quite regularly, the small beer being for the likes of me - the urchins. :o)

Interesting and a very good use of the large mash tun!

Be very interested to see how it turns out Tony.

Got any further on this one Tony? WHat kind of beers with they be? Are you going for a simple double pale recipe? I was reading that crystal can be steeped and not to worry about the sugar extract so I suppose you could make the first an Imperial IPA then the next you could steep the grains in the sparge water and make a darker weaker session beer.

Hey Nath. Here's the plan so far but I probably won't be making it until early July
    Batch Size: 25.00 L
    Estimated OG: 1.095 SG
    Estimated Color: 34.8 EBC
    Estimated IBU: 40.1 IBU
    Brewhouse Efficiency: 60.00 %
    Boil Time: 60 Minutes

    10.00 kg Pale Malt
    2.00 kg Munich Malt
    1.00 kg Wheat Malt
    0.20 kg Roasted Barley
    35.00 gm Chinook [12.70 %] (60 min)
    50.00 gm Bobek [5.40 %] (30 min)
1.32 tsp Irish Moss (Boil 80.0 min)
    2 Pkgs SafAle #S-04

I plan to mash this overnight in 40 ltrs of water, run off with no sparge (hopefully this will give me about 27 ltrs - maybe a little bit more) straight into the copper. While that's boiling, heat up 27 ltrs of sparge water. As soon as the boil is over, cool and into the FV. Then drain the tun and I should get the 27 ltrs come right out again with the small beer - absolutely no idea what the gravity will be though .. so I'll take several readings along the way. Going to do exactly the same hop schedule with both.

2 pkts of SO4 with the first brew and one with the second.

It'll be a learning experience! That's a good idea with the crystal though ... worth thinking about!

    Blimey Tony!

That looks an interesting brew! You'll have to let us know how it goes... It's going to be a huge abv around the 8 or 9% surely? One to saver rather than drink loads of.

All sounds so simple! Why haven't I heard of this before? 100 odd pints for relatively little effort. Fantastic.

Planning - To make more beer

Hey BM .. yes, should be around the 9.5% I think.
I'll probably put it away until Halloween and scare the family with it :o)

Sound nice, no aroma hops in that one then tony, going for a malty one for the first beer then and a more bitter weaker one for the last. Thats a good way of seeing how the bitterness ratio will change beers dependand on gravity.

    Interested to see this one!
