Got a Wherry kit for my birthday this weekend! I'm bottling my Amabrillo tonight so I thought I'd do a sneeky kit at the same time.

From info found elsewhere on this forum I'm going to:

1. Boil the extract for 10 minutes in an attempt to get a hot break. I'm not sure if this is absolutely true but you get more involved.

2. I'll lose the aroma hop characteristic by boiling so will need to add some hops for a 20-30 min steep.

3. I'll dry hop in the secondary FV.

My only problem is deciding which hops.

Wherry is described as:

Fresh and zesty with crisp floral flavours. A background of sweet malt and a hoppy ‘grapefruit’ bitter finish characterises this champion bitter.

The whole grapefruit/zesty bit sends me down the Amarillo route but I've seen elsewhere that cloned Wherry's uses Goldings (Styrian and East Kent). Not sure which way to go.

Anyone who's drunk this stuff recognise the aroma hop?

    I would go down the EKG for the steep route then styrians for the dry hopping, they are a relative of fuggles so you have the "standard" fuggle-ish qualities with a healthy dose of styrian-y smellieness. Great for dry hopping.

    I agree, the description sounds like Amarillo.

    Planning: Wheat beer fermented with Schneider Weisse yeast, a Stout, lots of hoppy pale ales
    Fermenting: Summer pale ale
    Maturing/Conditioning: Marynka pseudo-lager
    Drinking: Wheat beer, ESB, Vienna lager & shop bought stuff

    I would go with Nath's suggestions as that is exactly what I was going to suggest. Although the description would suggest Amarillo my experience of Wherry would definitely not suggest Amarillo.

    I used the same method with the last wherry kit I made.

    It does hot break, so watch it doesn't boil over!

    I used fuggles.

    I have since found out what is in the recipe.

    Pale & Crystal Malts + Caramalt.

    Hops are as follows:-

    Styrians - Nath will be happy!
    Progress
    Goldings

    Couldn't get the exact quantities though. My source of information was

    Did a 15 min boil and got a small hot break. Chucked in some EK Goldings for 10 mins and then threw the whole lot in the FV. Made it up to 23 litres and pitched the yeast.

    The yeast went at it like a mad man and pushed the lid up.

    All went very well and a nice short brewing session. Well I did bottle 15 litres of Amabrillo in the same evening.

    Will put this in a secondary with some Styrians on the weekend.

    Very nice kit. Smelt good and the yeast was very active.

    Was going to swap it for a Safale one because I've seen thousands and thousands of posts about fermentation stalling on the Wherry kit. Glad I left it as is!
