Hello, all ---

Damn, I was sure I'd posted in here yesterday but I can't seem to find my post anywhere... Mods, if my post from yesterday is awaiting moderation, then please feel free to delete this one.

Anyway, living in Germany I really miss my bitter and pale ale, so thought I would have a go at brewing my own. I want to start out with a kit to get a feel for the process, they may be later on move on to something a little more 'handmade'. The styles that I really like either light, hoppy bitters like Summer Lightning or Otley, or IPAs like Marston's Old Empire.

I've been told that Coopers kits are practically idiot-proof: does anyone have any experience with their real ale or India pale ale kits? And would I be better off brewing, conditioning and tapping straight from the barrel, or is bottling necessary? I can get 500 mL glass bottles here no problem, but the stoppers are a problem. Are these available separately?

Also, I'm pretty impatient, and I've been told that with some of these kits you can knock something drinkable out in 2 to 3 weeks. is that the case?

Sorry for all the n00b questions, but this really is a completely unknown field to me.

    The Coopers kits are good but I would give a premium kit a try first. Brupaks or St Peters both do a good IPA.

    They will take probably 6 weeks before they reach there best though so unfortunately some patience will be required but it will be worth the effort.

    Hi Tim. Nice to meet you. Greg is absolutely right recomending a premium kit to start with. The cheap kits, where you get 1,5kg of malt extract and have to make the rest up with sugar don't give anywhere near as nice a beer as the premium 3kg kits where you use all Malt Extract. Take a look at the Woodfordes range and, if you like a good hop bite, order some Goldings hops at the same time and put 5 gms in the fermenter while the beer is fermenting. That way you get a bit more bite plus a great aroma. Don't overdo it, though. 5 gms is about maximum for 40 pints. If I do a Woodfordes Wherry 40 pint kit I alway brew it to 37 pints. Give it a bit more flavour. Keep us posted.

    Have a think about doing extract brewing. There are a few recipes on this web site. I t really isn't much more effort that the kits. Have a read of this:
