Cool, just make sure you keep a small batch of bottles so you can compare! All to easy to drink and forget by that time!
Dunno about malts but dry hopping with some english hops like EKG or Fuggles....Styrians (I know I know) will change em a fair bit. You could also make a hop tea to add some hoppyness or even steep some crystal/black/choc etc etc malt in a bit of 65c water for 30mins before adding to the total to get some malty flavours in there.
Trial and error - Is there any other way?!?!?!?!?

Just about ready to bottle a brew of geordie mild with (as Nath said )- crushed choc malt (steeped for 30 mins) and a hop tea of fuggles added, smells fantastic
- am looking forward to this one!
Am currently drinking a coopers APA kit with added hop tea of challenger hops added - very quaffable it is too!

Its fine mate, I always find some beers clear faster than others. It can be down to a number of factors - yeast, fermentation, temperature etc etc. I did a wherry once and after 2 days it was crystal clear and lovely, I did another one about 2 months after and it took a month to clear.
Weird!
