In keeping with the time honoured tradition of pun based beer naming, I am going to have a brew day this Sat trying a Sierra Nevada pale ale clone (of sorts...)

Have come up with the following based on recipes online. Stupidly forgot to order the correct yeast last week, so am substituting with the 1318. Hope this won’t matter too much, as I’m not looking to make an exact clone, just some tasty beer.

Comments welcomed before I take the plunge on what will be my second AG batch. Looking forward to giving my new strainers a run in both the mash tun and boiler.

90 min Mash at 67 C

UK Maris Otter 4.8kg, (92.3%)
UK Light Crystal 400g (7.7%)

US Magnum 15.7%, 15g all of boil
Perle 8.2% 15g 30 mins from end
Cascade 6.3% 50g 10 mins from end
Cascade 6.3% 25g at turn off.

Wyeast 1318 London Ale III

    Looks good to me. 1318 is a great yeast, one of my favourites so I'm sure it will turn out great.

    Looks great mate, one question though - if your looking for a snpa type ale how come you using that yeast? I still think it will taste great looking at those hops (Magnum is one of my fav's really crisp). Saying all that I have yet to try snpa.

    Nath its only because I cant be bothered to just order the right yeast on its own. I completely forgot it when I got the rest last week. Reading the descriptions of them though, 1318 is supposed to be a bit citrussy, which sounds perfect. I wont be doing a blind taste test or anything, so I reckon I'll get away with it

    Mate its looks like a cracker. You cant go wrong with big late additions of cascade. What ebc is the crystal malt of yours?

    Have you ever tried mashing at a lower temp? I always stuck to 66 with a few higher but on the Sharps Golden Ale recipe on this site it says to mash at 63c, I did and was quite impressed with the results. I found that it left more aroma and as it was thinner I felt it was easier to drink. (could be dangerous!)

    Hmm, interesting point on the mash temp. To be honest, I was just blindly following a receipe. Last time I mashed at 65C. I shall do a little investigating.

    So changing the mast temp doesnt have any effect on the strength of the beer, just the body?

    The crystal is 60 EBC.

    Hi Stu
    yes, I'm fairly sure (others will have more knowledge than I) that lower temp mashes (around 65C) produce more fermentable sugars, giving a 'thinner' beer with a slightly higher alcohol content - more sugar turned to alcohol. A higher temp will create sugars that are not so redily fermentable, therefore a 'thicker' and sweeter beer with slightly less alcohol in it.

    Personally I've never been below 65C before - there is obviously a limit though, something tells me its around 62C, where you won't get much of anything :o)

    Yep Tony has it on the nose, the weird thing is beersmith does not take that into account when changing mash temps. It always produces the same sg no matter what temp you put in.

    Ha! Is that right? :o) I keep meaning to play with that and see what happens but never got around to it. That is odd. I thought BeerSmith was faultless. I want my money back!

    OK, brewday done. Chiller is running, and I am chilling with a beer in the garden. Everything went perfectly, and hit ALL my numbers which surprised me. Worst part was the morning visit to sainsburys for the water.

    Was aiming for 65% and nailed it. Nothing to write home about, but better than the 50 I got first time...

    Whole process was much easier this time. New strainers worked a treat. Time to plan the next one...

    Bottled last week, and finally had time to sort a label out this morning.

    Has had a weeks warm conditioning, now being moved somewhere cool for a final week before tasting

    Dont get me wrong, I've had cheeky samples when checking the gravity, but I don't count them. Not until I've popped a nicely chilled, fizzy bottle.
