Plopleukmaturation time

i am going to order the extract kit for way to Amarillo ale to leave fermenting whilst i go away.
my question is about the attempt at this beer with grains, i have just barreled it up and was wondering what you would recommend as a maturation period?

    also i am looking at getting a king keg would you recommend top or bottom tap?

    Hi Plople, I would say 5 weeks or so would be a good time to leave a beer of 5%.

    As far as king keg goes, I would say bottom tap unless you particularly want a top tap to you can stand/serve the barrel on the floor. Less to go wrong with a bottom tap. You can drink the beer quicker with a top tap as you don't have to wait for the lot to clear but then you are drinking the beer when its not in its prime.

    Yep I second that, a week for evey 1%

    (but as most will tell you I never get that far, by that time its 3/4's drunk!)

    I find that most of my beers are better young as the hop characteristic starts to change after 2 months in the bottle. I'd try a bottle after a couple of weeks and if it tastes good ... drink it :o)

    Ok i have just placed my order for this Greg how long for maturation in a barrel?
    and also how long does an extract take to make i have only done kits and all grain so far.

    I would give yourself a good 3 hours free and make sure you do a checklist (sounds stupid but really helped me). It will take more time as you are bringing to the boil a large amount of water and boiling it for approx 1hr-ish (that times includes cleaning etc etc)

    As for the maturation period, that was said in the 3rd post around 5 weeks in the barrel (same as any beer at around 5% really, but if your like me will be drunk a LOT sooner!).
