Lifting the lid
Hi All,
Nervous newbie here - my started my first brew (St. Peters Ruby Red starter kit) on Saturday - seems to be going well. I've got the message loud and clear about hygiene, and the lid and airlock have been on the whole time. If I start lifting the lid of the FV to take hydrometer readings every day, will I not be removing the protective blanket of CO2 and letting air (and poss bugs) in ?
Also I've seen some people recommend moving the brew to a second FV for a period of time to aid clearing - if its no longer fermenting does this not mean it will be exposed to the air and naked of CO2 ?

Yes.
But airborne bacteria, and fungi are not as common as you may think.
Or at least that's what the lecturer in the microbiology lab at uni told me.
Even after fermentation CO2 will continue to be given off from the beer as it is dissolved in the liquid.
After fermentation the alcohol provides an antiseptic quality.
You don't have to secondary. I don't.
But if you do just keep everything clean and you should be fine.

Varnish, how long do you keep yours in primary for? Do you add finnings to it as you are puttin' it in cornys?

Iam also a newbie and my first brew Youngs Yorkshire Bitter was left for 7 days in the F,V.
air lock bubbled away so i left well alone.By the 5/6/7 day bubbles slowed down I tested
on day 6 with a reading of 1.006/8 bingo in the barrel on day 7.The instructions give 5 to 10 days
so i hit mid way,i think the temp. is important i used a bambi heater under the chair i sat the F.V. on.
Not shore about second f.v.but you can leave in the f.v. a week longer if needed i.e. waiting for a empty
barrel etc.which will help clearing
