Hop advice???
Hi folks. I recently modified the "Way to Amarillo" by adding 500g of Chinook to it. The result was a lovely dry pale ale. (not bad for my second ever brew!)
Next time up I want to add 500g of dark malt too, hoping to make a darker brew, with a few more toffee notes. I also want to dry hop it to get that lovely "pine resin" flavour you get in some American IPA's.
I was thinking of doing a dry hop mix of Fuggles (for a bit of British flavour) and either Centennial or Simcoe to get more of that American flavour.
Do you reckon i'll get enough of a piney taste out of the Centennial or Simcoe - or am I barking entirely up the wrong tree?

Your Dark Malt will darken the brew but I don't know if you're going to get any toffee flavour from it. You might be better to steep some crystal malt, or dark crystal malt, say 200 gms at 66°c for half an hour, and add the resulting brew.
Neither Centennial or Simcoe are noted for any piney flavour and the ones I can find with the right description are Ahtanum, Chinook and Super Alpha (Who?). Dry hopping produces primarily aroma and Goldings is a better dry hop than Fuggles, being more noted for aroma. To add flavour you really need to simulate post-boil hopping and steep about 20 gm of Fuggles or Goldings in 2 lts of boiling water from the kettle for half an hour and add the resulting "hop tea". You would need to do the same with the piney hops to get that flavour and dry hop for the extra aroma. Personally, I think you need to decide on one or the other. Trying to combine British and American flavours might just combine to produce neither.
