Ginger beer SG rating
Hi,
New to brewing, got a kit at Christmas which made some nice ale, but wanted to try and make ginger beer (large consumption of Crabbie's was getting too expensive). I followed this recipe "http://www.brewuk.co.uk/store/recipes-ginger-beer" and put it in the secondary fermenting vessel yesterday, but the SG rating was 1.02 (@18oC) and started at 1.04 (@22oC) - which I worked out online to be only about 2.7% and is already tasting a little dry(from other posts I know this is common problem). I know it has a few days to go here, but I don't know how much higher this will get by the end? Would it be OK to give the yeast a little more of a kick start and add some more sugar to the SF vessel and also numb down the dryness? If so how much?

The readings seem a little odd (was it 1.020 or 1.002) and how long has it been fermenting for?. What did the gravity start at before you added the yeast?
Dont worry about the dry taste, its too early to tell whats going on as its still fermenting. I wouldnt add yeast as that would do nothing and adding more sugar will only make it stronger and drier. People add sweetenrs to finished cider if its too dry as that will make it sweeter and (crucially) not allow further fermentation.

Started at 1.04 (but I had just added the yeast - took it straight after (will remember in future to do it before. The second reading was 1.02. Been in there just over week now. I was just wondering if it would still be strong at the end if its going at this rate. I wasn't going to add anymore yeast. Are there any kind of sweetners that are best used?

It all depends what it ends fermentation on. If it starts at 1040, then ferments to .995 then the abv would be around 6% If the reading your getting of 1020 does not move in a few days you may have a stuck fermentation. theres a few things to do in this case-
1. - warm the brew up (should be room temp)
2. - Stir up the yeast with a sterilized spoon (makiing sure4 not to splash much)
I reckon its gonna be fine, just keep a lil' eye on it. As for the sweetners, not too sure I would just add some when pouring, go for any brand and just adjust the amount to what you want.
