Does anyone have a recipe for Fuller's Discovery. I know it uses barley and wheat with Saaz for bittering and Liberty for flavour/aroma.

Anyone have more details?

    Here is the one from Graham Wheelers Book.

    for 23 litres.

    3.310 KG Pale
    0.580 kg Wheat
    0.170 Crystal

    41 Grams Liberty 90mins
    14 Grams Saaz 10 mins
    8 Grams Saaz steep

    Not quite sure how accurate that one is though as it states ABV as 3.7% but I'm sure Discovery is over 4%.

    Found this on the Fullers' website:

    Brewed using a unique blend of malted barley and wheat for a delicious malty taste bursting with rich, biscuity flavours, Liberty hops are then added for a distinctive zesty character and fruity bite, whilst Saaz hops add a gentle bitter taste for a clean, refreshing finish.

    In cask, Discovery is 3.9% ABV, while in bottles the strength is 4.5% ABV.

    I thought that the long boil was for bittering. So that recipe might be the wrong way around. I'm going to try it the other way around and see what happens.

    The boil is for bittering but that description doesn't really tell you much.

    They are both aroma hops really so it would work the other way round.

    Strange that the ABV is so different in the bottles, perhaps it to extend the shelf life.

    I really like Discovery so might give this one a try myself.

    By the way, do you know what L rating the Crystal is and can you recommend a yeast?

    I would say its standard (130) crystal and for yeast choice it has to be Wyeast 1968 Fullers ESB.

    That yeast is amazing, really smooth taste, fast acting and clears quickley. So good I managed to "keep" 2 jars worth from my last brew.

    Batch Size: 18.93 L

    Boil Size: 7.38 L

    Estimated OG: 1.044 SG

    Estimated Color: 7.6 SRM

    Estimated IBU: 20.8 IBU

    Boil Time: 60 Minutes

    Ingredients:

    1.50 kg Light Dry Extract (8.0 SRM) Dry Extract 57.69 %

    0.50 kg Light Dry Extract (8.0 SRM) Dry Extract 19.23 %

    0.25 kg Wheat Dry Extract (8.0 SRM) Dry Extract 9.62 %

    0.25 kg Cara-Pils/Dextrine (2.0 SRM) Grain 9.62 %

    0.10 kg Caramel/Crystal Malt - 60L (60.0 SRM) Grain 3.85 %

    40.00 gm Liberty [4.30 %] (60 min) Hops 10.7 IBU

    10.00 gm Saaz [4.00 %] (Dry Hop 7 days) Hops -

    8.00 gm Saaz [4.00 %] (30 min) (Aroma Hop-Steep) Hops -

    15.00 gm Saaz [4.00 %] (10 min) Hops 1.5 IBU

    1 Pkgs London ESB Ale (Wyeast Labs #1968) Yeast-Ale

    I'm going to boil just the 0.5g of DME and the Wheat for the full 60 mins. Adding the rest of the DME with 10 mins to go.

    Added the the Carapils for head retention.

    I'm not going to bother with the Irish Moss this time.

    All done and apart from a little boilover with the first lot of extract it went well.

    Now in the FV with a very nice yest head.

    OG was 1041 due to me making it up to 20 instead of 19 litres.

    I'm looking forward to trying this one.

    Good on ya Si, a nice grain bill there. Always good to see noble hops in a proper drink (rather than always in a lager)

    Just been on the Fullers website and was direct to the teasting notes for Discovery. It contains Cascade as well and Liberty and Saaz. I feel another attempt coming on after I've done my wheat beer.

    .......teasting notes for Discovery. It contains Cascade as well and Liberty and Saaz.

    Graham Wheeler notes a Citrus aroma. I can't find anything about Liberty and Saaz that suggests Citrus. Cascade would, and the best way of getting the Citrus aroma, in my opinion, would be to use 10 - 15 gms for dry hopping in the FV.

    If you're not living on the edge..... you're taking up too much space!!

    Fermenting: - Ginger Beer experiment
    Conditioning: - A normal bitter with Styrians
    Drinking: - All of it!!
