Pale Malt 2280 grams 43%
Wheat Malt 2650 grams 50%
Carapils 370 grams 7%

Hallertauer Hersbrucker 45gms 90 minutes

Wyeast Weihenstephaner – 1 litre starter

Final Volume: 23 litres
Original Gravity: 1.052
Final Gravity: 1.012
Alcohol Content: 5.2% ABV
Total Liquor: 33.6 litres
Mash Liquor: 13.3 litres
Mash Efficiency: 75%
Bitterness: 15 EBU
Colour: 10 EBC

I finally got around to it & although it took 6 hours I really enjoyed the process. I had an audience most of the time which to be honest I could have done without, the pump drew most attention.

I thought everything had gone to plan but the major headline is I missed the OG. Should have been 1052 but it came in at 1046 which I'm quite annoyed about.

I've been trying to work out what went wrong & have come to the conclusion it was most likely the sparge, I think the water ran straight through the grains some of the time. Next time I think I'll batch sparge, I've got the pump so may as well make best use of it, all part of the learning process I guess.

The sneaky wort tastings were fantastic, much nicer than the extract brews.

BTW Greg, a message for Warminster, I found a Wild Oat seed!

Nice one Hamish! Well done and now it's all downhill from here!

Who was the audience? Any pics?

No pics I'm afraid, completely forgot but had plenty to do as it was.

Family, friends & the odd general passer by, pain in the @r$e, must have been the fantastic smell that attracted them.

Nice one hamish, I wish you took piccys of your setup, would have been great to see it in action. Dont worry about missing the gravity, you wernt a million miles off and its your first time plus you know where you went wrong so your a step ahead for next time.

Well pleased for you mate, did you get the 23ltrs you wanted?

Just to compound missing the gravity I'm a little short of 23 litres but the starter has made it up. The yeast has gone mental!

    Id love a pump!

    heh heh!

Me too ... been looking at quite a lot recently... but without somewhere permanent to put my gear, it seems a waste of time - and more cleaning!

My Big Beer came out at 21 ltrs (I aimed for 25) so don't worry about dropping a little short - as with the gravity. I never seem to allow enough for the soaking up of the hops!

    Wyeast Weihenstephaner - WARNING!

This yeast has gone mental, I'd read it was a bit lively so instead of fitting the normal airlock I fitted a syphon tube to the bung & put the end in a demijohn with some water to keep it air tight.

The yeast head has filled the space above the wort & is now percolating through the tube & into the demijohn. I'd take a picture but the battery is flat.

    Amazing.

    Good stuff Hamish.

I think the maltings find it difficult to completely clean out the equipment when they change the crusher over so there is sometimes a couple of rogue grains in some batches. Won't do any harm though.

    Planning:Maybe a lager.

No worries Greg, I should have put a smiley winky thing there as it was more tongue in cheek than anything. As a weed Wild Oats shouldn't be there at all but to be fair to Warminster the farmer should have grown a cleaner crop.

Not originally but... hmmm... where can I buy a heat exchanger?. Perhaps I could make one?, another little project, thanks mate I'm going to look into this.

I bought the pump because I just didn't want to jug stuff about especially as I believe & correct me if I'm wrong, you get a clearer beer if you recirculate after the mash.

    Oh I reckon I could

Metal coffee pot with a cheapo Tesco kettle element through the bottom, 8mm soft copper pipe coiled inside - inlet connected to the pump - outlet to the mash tun, cylinder thermostat attched to the coffee pot - controling the element, little 12v motor to turn a paddle through the lid.

    £25, Bobs your uncle!

I reckon a cheap deep fat fryer would do with some mods.

Just racked this one and will bottle it tomorrow evening, the smell is amazing, very authentic and it tastes pretty damn good too, even though I do say so myself.

Just a shame it will probably be the weakest wheat beer I've ever drunk. No turning back now, cheerio extract its been nice knowing you.
