blackhatchetboyFruit Beer Problem (?)

1 year ago | blackhatchetboy (Member)

Hi there,
I recently tried my first fruit beer. I was looking to make a kinda fruity IPA. Here's the recipe.

250g wheat malt
250g munich malt (steeped for 30mins)
2.5kg LME (60 mins)
35g Northen Brewer
15g Williamette (30 mins)
15g Williamette (10 mins)
5g Irish Moss
2kg Frozen Mixed Summer Fruits (add to primary when cooled)

All the brewing went well and it was bubbling away nicely for the last week or so. I decided to switch it to my secondary bin today and dry hop a further 15g of williamette.
It smells nice and fruity, great colour, clearing well, gravity has dropped to 1010...but it tastes....fecking awful!!!

Have I made an error somewhere? Will it improve? Any help...anyone?

    Can you describe the taste?

Probably worth holding on for a few weeks see if it improves.

    Planning:Maybe a lager.
    Fermenting:
    Conditioning:Pale with Styrians
    Drinking:Cascade Pale Ale, Summer Lightning

I'll try my best but i've never been very good at the Jilly Goolden type thing.

Firstly there's no weird smells. If fact it smells rather nice with a blackcurranty aroma. I've also just dry hopped it so it'll get more aroma soon.

The biggest problem is there isn't much taste really. It tastes more like weak cordial than beer really. It also has quite a bitter aftertaste.

Tasting it a second time I don't think it's gone off. It's just a bit disapointing. Is there anything i could do to beef it up?

I would leave it alone and let is mature. Sounds like its going to get a lot better to me.

Woohoo! Shows what a few days can do. The dry hopping has given it a good aroma without masking the fruit but the taste has improved massively (tastes like beer now!)
Not at all like a belgium friut ale but very cool all the same!
