I've started this new thread so we can discuss the proposed Forum brew.

First thing is to see who's up for it then discuss the rules for the recipe plus decide on the recipe.

I vote for a Pale Ale of around 6% with 60 IBU target. Ie Punk IPA type beer. Just because this is what I was thinking of next but we need to decide together. Definitely think it should be Pale Ale.

Drinking:Cascade Pale Ale, Summer Lightning

    Punk uses Crystal, Chinook, Ahtanum, Nelson Sauvin and Simcoe!

    I recon it should be smthing like:
    100% Pale Malt
    Any Yeast
    Target Abv 5.5-6.5%
    Target IBU 50-75
    Hops: Choice and own hop schedule from Magnum, Cascade, Crystal, Chinook, Ahtanum, Nelson Sauvin and Simcoe!

    To get around postage how about posting all bottles to Greg with a cheaque for the cost of a parcel (£5.65), and when Greg recives all the Bottles He posts a box back to you with one of everybody else's beers in! ave on folking out £2.90 or whatever for eery bottle you send out!

    I was thinking about suggesting the same thing with regard to postage. If you wanted to make good use of the postage then order some stuff I could just put them in with that and that would save you having to pay an extra set of postage costs so long as the weight stays below 30kg.

    Also like how the recipe criteria is shaping up. Perhaps we could just leave the hops totally up the brewer so long as the IBU range is met. That way people can use stuff they have knocking around. I would also suggest that any extract brewers are also welcome to join in.

    We will need a bit of conditioning time on these one's though so not going to be a speedy process but this will give us time to get the bottles sent etc.

    Yeah Good idea about hops Greg! Extract brewers would eaisly fit into the Forum Brew Model! They just need to use Pale Extract!

    Wonderful!

    I would have thought that Punk was above the 60 odd IBU.

    So - Traditional Pale Ale with just Maris Otter and own choice of hops? We'll need to all jump in with what we want to use. I'd be happy if we say no sugar in the brew too. So, once we have the brewday (give or take 7 days?) we should be able to work out postage day! I've got some Northern Brewer hops and have been waiting for the opportunity to use them in a high IBU brew, would that be acceptable?

    Okay then. Final spec

    100% Pale Malt (can be extract)
    Any Yeast

    Hops: Any.

    We'll put a deadline for people to enter say end of Jan? You can then send to me once we know final numbers. If we get too many then we'll split it into smaller groups so we don't have to send too many bottles. We can also sort out the postage stuff by then.

    I've ready been working on my recipe this afternoon. Its going to be called Rocker IPA.

    Tasting 4 or 5 bottles of 6%+ could be fun... Might have to sample over a few days. I suggest we each setup a thread with the recipe then each taster can add comments to that thread.

    I won't be brewing mine until mid Jan as we have a new batch of Wyeast coming in fresh from the states and I want to use one of them.

    I'm working on mine in BeerSmith right now, Think its going to feature lots of American Hops!
    Mine is going to be called: Hoptimist

    and like Dan, I'll be using lots of American Hops.

    American and NZ all the way for me. Might dry hop in a secondary fermenter, depends on how it tastes after primary.

    Just need to decide what yeast. 1056 American Ale I think or I may use the 1968 ESB, or maybe something else all together.

    Pretty much decided on the hops but may change the name yet. May even use a different malt, was thinking about Golden Promise instead of MO. Or maybe even a mix of the 2. Was thinking about getting some extra pale MO from warminster maltings so may grab a bag of that as I need to put an order in with them next week. Is that allowed??

    Just worked mine out! One Malt, Four Hops (3 American and 1 NZ) Not selected yeast yet!

    Aslong as its only pale malt/s or Extra Pale your using I have no problems!

    Whats the deal with adjuncts?

    I don't know, but I think the more different we each make them the harder it will be to tell the difference that the hops and yeast make to the flavour.

    I'd be really interested in using the extra-pale marris otter Greg, will you be buying in enough to sell on?

    Hi Tony, yes definitely, I will get a couple of sacks and split one into kg. I think the price is the same as standard MO but I'll confirm once I speak to Warminster next week.

    Perhaps Varnish has got a point, maybe we should all use the same malt although this obviously is impossible if any extract brewers who want to join in. I would have thought Low colour MO tastes very similar to standard anyway, just produces a lighter coloured beer. I think different pale malts can used but no adjuncts. The hops and yeast will make the most difference to the flavours so different malt won't really make much difference.

    Amarillo

    Haven't decided on yeast as yet but most likely to be 1056 American Ale Wyeast.

    I'm happy to go with the standard MO, no problem at all.. and as you say, I doubt there is much in the way of taste difference.

    BeerSmith is giving me 11.2 EBC with the standard anyway.

    I think I may have a look into changing the yeast however. I like S-04 but I have a friend who had some success using a Nottingham yeast in an IPA, I see you have the Danstar Nottingham .... have you used it?

    I've got the recipe mostly straight:

    12 Litres (bottle it all)

    100% Marris Otter (extra pale or normal)

    Hops will be:
    Centennial (bittering)
    Amarillo (aroma)
    To around 60 IBU and will probably dry hop with both hops.

    Still undecided on mash temp.
    I think the increased body and sweetness from a higher mash temp will help to offset the bitterness and higher alcohol level.

    Yeast?
    I'm thinking either 1187 or 1332.

    Water?
    I might have a go at producing something in a Burton style.

    I've used Nottingham once and the beer didn't turn out that well. I don't think it was down to the yeast to be fair, more to do with the recipe but I always use S04 if I'm using dried yeast as its never let me down and always ferments and clears quickly.

    A lot of microbreweries also use s04 for the same reason.

    That said I've only heard good things about Nottingham and I know a lot of home brewers will only use this one. I guess its down to personal preference.

    Yes indeed. I am a big fan of S-04 and use it most of the time, never had a single problem with it - maybe that's why I should use it this time ..?

    Hey peeps!

    Count me in, I rekon I could brew mid jan as I am due a brewday soon!

    As for the name maybe something along the line of "show us yer noob-ies" as its only my 3rd ag.

    Looking forward to this one, time to get some funky hops in!

    That could be it but the more the merrier. Just get on and brew. If anyone else wants to join in them they just need to let us know before the end of Jan when all the samples need to be sent in.

    This is a great way to try lots of different recipes at once so lets hope they come out really different.

    Perhaps we could make it a regular thing if it all works out, maybe 4 times a year or something. Different style each time. Xmas beer would be a good one for later in the year.

    I've been delayed getting my brew on the go due to various check ups, hospital appointments and medicals! Arghhh!!!!

    No problem Dandan. If everyone gets them posted to me when they can, I will then send back out when I have them all.

    As far as packaging goes, I would wrap in bubble and cardboard and place in a box.

    I'm loving the taste if mine although its making the other brew I made in the same day almost tasteless!!!

    Greg .... excellent - I'll sort it this weekend with any luck! I have a brew that I made a couple of weeks beforehand, quite a high alcohol content - should have been ready for tasting yesterday but looks like its going to take quite a bit longer to condition, tastes a little sweet.
