hello all,

I am going to be starting a new brew after xmas [probably the Wherry as everyone seems to rave about this!]

I was wondering if anyone has any advice on how to put depth of flavour into the brew alongside the normal extract. so :-

1. any recommendations of flavour [ive heard of corriander?!]
2. how much you put in
3. when do you add the flavouring

Many Thanks brewers!

Hi and welcome. I would probably stick to the kit as is for the first brew and start experimenting afterwards otherwise you won't really know what the starting point is and therefore not be able to tell what is doing what.

There are a few spices that people use

    see here for 1 example - http://www.brewuk.co.uk/forum/topic/christmas-ale#post-295

Cinamon, cloves, cardomen, ginger etc etc.

To be honest thats just for xmas bres and probably not worth chucking in for a normal beer. I would do a kit, taste it then have a look at what to add for your likings.

If you want to experiment then I would either dry hop the beer with 20-30g of aroma hops (styrians, goldings, cascade ect etc) or make a hop tea and add it before adding the yeast.

Drinkin' - nowt, it's all gone
    Plannin'-
Loads a beer after an upgrade!
