Well just did my first extract last night and all went well. One thing I'd change would be to put my bottled water in the fridge so that the cooling would have been quicker.

Made with the addition of steeped specialty grains (thanks Greg for letting me off the 40p!):

200g Crystal Malt 60
150g Carapils

I made it up to 23 litres but, I guess because of the extra grains, the OG still came out at 1050.

Amarillo hops smelt amazing and I hope that will come through in the final beer.

Now in the FV and there's plenty of action. It's a bit darker the I wanted but that's all part of the fun!

I will bottle it in 2 weeks time and then condition for 4 weeks (yeah, right!).

    Nice pics! Haven't done a kit/extract brew for quite a while, but looking good there!

    Well done for changing the grains around, how did you come up with the idea? I reckon that will taste great.

    (Nath takes a mental note of carapils - yet another ingredient to use in the future!)

    Good stuff Simon. Let us know how it turns out. You'll probably find it lightens up in colour a bit when it clears.

    I got the idea from another forum. I just asked would specialty grains make this recipe better? I was told that the Crystal would provide colour and a slight caramel character and that the Carapils would provide more body.

    I've no idea (yet) about the proportions and how they're calculated. Also, given that there's 3Kg of extract malt in the recipe, whether the Carapils was necessary. Proof of the pudding and all that.

    I'll post more pictures during the bottling and, of course, the finished article.

    Nice one Simon, I've recently done my first extract brew (summer ale) its been in the keg for about a week now and its tasting mighty fine. I'll post up some pics from when I did it as well as the finished product soon when its nice and clear.

    Guys

    Can you take another look at my Flickr pictures please? The last picture is 5 days into the brew and, although the SG is 1014 and short of completion, I've not seen so much yeasty stuff on the top of the brew before at this stage.

    Is this normal for this recipe? The kits I've done have all cleared off the top by now with just little bits present.

    Hi Simon, its pretty normal with US05 yeast. You will find it will ferment down quite low too.

    Yes, you must at least try and get some from the fermenter to keg without drinking it all by way of the "samples".

    Bottling tonight!

    Had a minor mishap and spilt a little on the carpet taking it downstairs. Forgot to put the lid on tightly! Don't worry only spilled a few drop and the carpet'll be fine. Eventually.

    Thought I'd stumbled on to some other sort of forum for a minute!

    Well, bottled what was remaining after the spill and added some photos to the link at the top of the thread.

    Had a bit a minor disaster (I see a pattern emerging with this one!). I'd wanted to siphon into another FV but the tap that came with my new FV didn't fit my Little Bottler! Much head scratching and searching produced my little used plastic keg. With a tried and tested butt joint and some insulating tape I managed to snatch victory from the jaws of defeat. (Was that a little over dramatic?)

    Anyway, all bottled. Bottling has become much easier with 3 bits of kit:

    A Little Bottler that allow me to fill the bottles without turning the tap on and off.
    The bottle tree drainer and the bottle rinser which means sanitising 40 bottles only takes about 10 minutes.
    Starsan (or any non-rinse sanitiser).

    40 bottles of IPA in the garage carbinating and then in the fridge to condition.

    It looked like beer. It smelt like beer. So, therefore, it must be beer.

    Just had a sneaky taste and it's as hoppy as a hyper kangaroo on a pogostick!

    Still a bit young but very tasty.

    Hi Neil

    Yeap that's a Little Bottler. It's easy to use but it does drip a little so you need to have something underneath it to catch the drips.

    Compared to bottling without one it's a breeze.

    I use my little bottler on the syphon tube so I can just line up my bottles and sit on the floor and just plonk it into each bottle. Saves even more time, less waste, less driggage and less back problems!
