Brewday!!!

Double A side this one, I'm attempting my partigyle beer! Difficult one to manage this one as I can only partly use beersmith. The idea is that I make one beer from the first mash - no sparge. 13.2kg of grain - tried to get 40 ltrs of water into the tun but with all that grain I could only get in 35. This will be the 'Big Beer'.

10.00 kg Pale Malt (2 Row)
2.00 kg Munich Malt
1.00 kg Wheat Malt
0.20 kg Roasted Barley
35.00 gm Chinook [12.70 %] (60 min)
35.00 gm Cascade [7.60 %] (30 min)
30.00 gm Challenger [7.60 %] (0 min)
1.32 tsp Irish Moss (Boil 15.0 min)
1 Pkgs SafAle English Ale Yeast #S-04

Did the first mash overnight - went in at 9.30pm and stayed in until 5.30 this morning. Mash temp was 67C and AMAZINGLY the whole mash only lost .1C. I couldn't believe it so I took a pic (will post that one later.

The dough-in .. nearly broke my arms this one!

Tucked up safely for the night

Big Beer is currently running into the FV whilst Small Beer is mashing - has been for about 2 hours now.

    That's a big mash! I guess the shear amount of grain helped keep the heat so well.

    So... pics first and details after! (note: not all stages photographed for the sake of sanity!)

    I'm not sure I believe this myself, but the tun lost 1.1C in an 8 hour mash! (sorry - was tired last night, missed a whole degree on my notes!)

    First runnings of the Big Beer .. recirculated

    Into the boiler

    35g Chinook at boil

    Nice rolling boil

    OK .. so Big Beer in boiler.. small beer mash time!

    Back to BB (big beer) Irish moss

    Into boil goes the cooler .. 15 mins from end of boil

    Zero mins.. in goes the Challenger

    First runnings into the FV

    BB all tucked up and SO4 added

    Back to SB (small beer): First runnings for recirculation:

    Into the boiler (copper... whatever!)

    Look ma .. twins! Yeasties in and settling down to do their rabbit type thing!

    Right some details

    SG for BB = 1075. I had 1075 before the boil and added 2 ltrs liquor after boil to keep it at 1075.

    SG for the SB has settled at 1065. I think I hit such a high 'efficiency' for the SB as I couldn't get enough liquor into the tun for the BB, leaving a great deal of the goodies in the grain for the SB .. also, seems the sparge went rather well (7.5 ltrs @ 75C).

    All in all, 21 ltrs for the BB and 23 for the SB, 8 hours - 7 today and 1 last night - not a bad brew. Have a good feeling about this one .. although I'm not sure it's something I want to do too often!

    That's some serious kit there. Do you have a 2 or 3 vessel system?

    Well .. at the moment I only have one 25ltr boiler - although I do have a 30 ltr waiting in the wings. That's the main reason for doing this partigyle really ... big mash tun and only a small boiler - oh and all of my FVs are 25/23 ltrs.

    If we all ever had all we wanted, what would we do?

    1065 sounds like a great gravity. I take it you were expecting more from the first ber (gavity around 1085-50 perhaps???) Are you using 2 yeast strains or keeping them the same, any dry hopping going on?

    Hey Nath ... yes, the OG was about 1090 but I deliberately brought it down .. for two reasons really... I needed more beer and couldn't get enough liquor in the tun... and I don't really want a beer that strong

    Quite pleased with the small beer SG though.

    Used exactly the same hops for both and the same yeast... wanted to compare them really. No dry hopping planned, but I may well do ... I'll see when I rack them.

    Just an update - bottled the small beer earlier and its tasting fab! Am a little worried about the figures though. Gravity when it went into the FV was 1065 - now its 1005. That comes out at 8% (gulp)

    I'm bottling the big beer tomorrow ... hoping it's not too much higher ...

    Yes indeed .. if I get home early enough this evening I'll bottle it and let you know. When I ran the beer into the test jar for the hydrometer I kept filling it expecting the hydrometer to float... and it didn't! Don't think I've had a beer go as low as 1005 before!

    Lesson number one ..... use considerably less grain. I don't know what I was thinking of using that much!

    Yes indeed .... may have to put these back for Christmas. With any luck I'll be making a SNPA clone next weekend. I'll post the recipe when I've tweaked it.

    I've just cracked open one of the small beers, been in the bottle a WHOLE WEEK... arrgghhh, couldn't wait any longer!

    Quite sweet still .. bit of carbonation but its such a full taste it's coating the inside of my mouth (in a good way!). I think this beer may be a bit much for a Thursday ... especially after sinking a few in the pub earlier

    This beer is going to need a long time in the bottle... it would have benefited from about 50g of a good dry hopping... but I errrr ummmm forgot!

    The big beer came out at 9.2% btw.

    Fantastic. You must be dead chuffed.
    PS - am I the only one who thinks that the tap on the mash tun is amazing. Really looks like it means business. In a tap like way.

    Mmmmm yes you may well be right - may not remember it at all!
    I bought the tap from a bloke on another forum .. it came with that tap ... and you're right, as far as taps go, it's rather special

    Just thought I'd sample the BIG beer

    Nowhere near ready yet - only been in the bottle a week but I just had to try it. Was worried that it was going to be a little too sweet but it's just about right (hoping that the hops don't lose any bitterness in the time it will take to properly condition).

    This may be the last coherent thing I say today.... I like this beer!

    So how was the porter Greg?

    I'm supposed to be brewing a porter for my mate's birthday (after christmas) but can't settle on a recipe. All my best porter recipes are damn near identical to the stout ones.

    Can you post your recipe Greg?

    I'm drinking another big beer at the moment, only been in the bottle 2 weeks so needs shed loads more time but it's a winner! If I have another I'm going to have to kiss good bye to anything else I may have wanted to do today!

    Hi Tony, the porter is coming along nicely. Not ready yet, needs about 4 weeks more in the keg I reckon.

    I'll stick the recipe up when I get next week as I don't have it at home. It had brown malt, choc malt and Cara gold from memory with Northdown, first gold and Goldings (I think). Lots of late hops too. Its deep ruby in colour, dark but not black and around 6.5 %.

    It was a recipe from FFF brewery in Alton and they make some great hoppy beers.
